DIY Healthy Chocolate Chips

Combine the following in a double boiler (or a glass bowl on top of a small pot of boiling water). Whisk the ingredients slowly as they melt together. Once melted and creamy, remove from the heat. At this point, you've got ganache. Drizzle it over popcorn or ice cream, or dip fruit in it. Yummmm! To finish making healthy chocolate chips, line a jelly roll pan (the kind with a lip) with parchment paper. Pour the melted chocolate into the pan. Spread it out evenly. Transfer it to the fridge or freezer and allow it to harden. Remove from the refrigerator or freezer. Either break the chocolate apart into chunks. Or if you prefer a more uniform size, use a knife to cut the chocolate into 1/2" strips, turn the pan, and cut perpendicularly into 1/2" chunks. Transfer your healthy DIY chocolate chips to a bag and store them in the fridge or freezer. Use them as you would regular chocolate chips!
