I am warning you now…

Coconut butter is addictive.

To that jar of coconut deliciousness I send my emotions on rainy days, bad days, long days, busy days, and sad days. And just now I’ve reminded myself that my jar of coconut butter is empty.

Clearly I’ve had many of these days lately.

But alas, Wildly Organic has you covered if you find yourself in the same predicament as me.

It’s made from 100% pure dehydrated coconut and has a creamy and smooth texture. Nothing like some other coconut butter I’ve stumbled upon which can be grainy in texture.

If you’re struggling with how to use coconut butter, let me take a moment to, firstly, stare blankly in utter shock. (Kidding.) Then secondly, give you a few ideas.

  1. Spread it on things. As in, ALL the things — toast, fruit, waffles, pancakes, crackers, need I go on?
  2. Eat it with a spoon straight out of the jar.

I can’t think of a better combination than coconut and berries. Cocoberries should be a thing. Case closed.

These Raw Coconut Butter Berry Bites are so simple and so yummy. The dash of vanilla and fresh lemon zest will send you humming and dancing all the way to the Caribbean.

I’ve added some optional additions should you like to decorate your coconut berry bites for extra texture.

My favorite combinations? Cashews with shredded coconut and cacao nibs with goji berries.

With this new found holy grail that is coconut butter, go forth and live well.

Raw Coconut Butter Berry Bites
These Raw Coconut Butter Berry Bites are so simple and so yummy. The dash of vanilla and fresh lemon zest will send you humming and dancing all the way to the Caribbean.
    Servings12 to 14 bites
    Prep Time10 minutes
    Passive Time1 to 2 hours
    Ingredients
    • 1cup Wildly Organic Coconut Butter
    • 2tablespoons freeze-dried mixed berry powder
    • 1tablespoon sweetener of choice(honey or maple syrup work well)
    • 1/2teaspoon vanilla extract
    • 1teaspoon lemon zest
    Instructions
    1. Add all ingredients to a food processor.
    2. Blend until you attain a smooth consistency. Give it some time and it will turn into a nice smooth paste.
    3. Using either silicon ice cube trays (super easy to pop the bites out of these afterwards), a plain ice cube tray, or a slice tray, simply divide or spread the mixture so it's about an inch deep.
    4. Pop in the freezer for at least an hour.
    5. Once the mixture has set, you can serve them up straight from the freezer.
    6. Store in the freezer to keep them set.
    Recipe Notes

    Any of these (or combination of these) optional ingredients may be added for extra texture. Just stir in after processing:
