You know goji berries are so good for you, right?

What if your little ones don’t care for them? Chances are, they love applesauce… Adding goji berries to applesauce is the perfect solution!

And even if your family are goji berry lovers, this Homemade Goji Berry Applesauce is a fun and nutritious adaptation of regular applesauce!

Even if you’re not into canning quart after quart of applesauce, you can still produce small batches as your busy schedule allows! An electric pressure cooker — such as the Instant Pot — comes to the rescue!

Choosing The Best Apples For Goji Berry Applesauce.

Picking the right apples for your applesauce is crucial. Some varieties are best for eating fresh, others for cooking. If you choose an apple that isn’t very sweet you’ll end up needing to add some kind of sweetener. (We recommend our Wildly Organic Coconut Syrup for sweetness!)

  • Cortland
  • Gala
  • Jonagold
  • Jonathan
  • McIntosh

Like a tart applesauce? If your sauce doesn’t turn out as tart as you’d like add a teaspoon or 2 of lemon juice.

Simply wash, core, peel, and quarter the apples. Cook for a few minutes in an electric pressure cooker, then mash with a potato masher. Or, use an immersion blender to pureé to the consistency you like. It’s really that simple!

Homemade Goji Berry Applesauce
Using an electric pressure cooker -- like the Instant Pot -- you can quickly turn fall's apples and superfood goji berries into a delicious and nutritious applesauce!
    Servings8 half-cup servings
    Prep Time15 minutes
    Cook Time5 minutes
    Passive Time15 minutes
    Ingredients
    Instructions
    1. Peel, core, and quarter apples and place in the inner pot of an electric pressure cooker, such as an Instant Pot.
    2. Add 1/2 cup water.
    3. Secure the lid, with vent set to SEALING.
    4. Set on MANUAL for 5 minutes.
    5. In a small glass container, bowl, or mug add dried goji berries and 1/2 cup boiling water (or enough to make a mug of goji berry tea, just leave enough water to cover the berries).
    6. Once the berries are very soft (just a few minutes) use an immersion blender to puree.
    7. When the apples are done cooking, you can use the Quick Release or Natural Pressure Release method to release the pressure.
    8. When it's safe to open the Instant Pot, use a potato masher to mash the apples (for a chunky consistency) or an immersion blender to puree to a smoother consistency.
    9. Stir in pureed goji berries and any optional ingredients, such as lemon juice or coconut syrup.
    10. Enjoy warm, refrigerate, or freeze until ready to use.
    Recipe Notes

    Can we take a minute to talk about coconut syrup? They are not all created equally! I ran out of WO Coconut Syrup and bought another brand from a local store. It wasn't bad, but it was very disappointing after using the Wildly Organic brand. Wildly Organic Coconut Syrup has this lovely, golden, caramel-y deliciousness that I haven't found anywhere else.

    Note to self: Do not wait until the last minute to order coconut syrup from Wildly Organic. In fact, just order a case or two. Always good to be prepared, right?
