Organic cacao and organic cocoa are not the same. Raw cacao powder and nibs are made from the raw, unroasted beans of the cacao plant. To make our cacao powder, we press the raw beans to remove the cacao butter and then grind the beans to create powder or nibs — it’s cacao just as nature intended.
Cocoa, on the other hand, is made after the cacao bean has been roasted at a high temp to remove the cacao butter from the beans. Unlike our cacao powder which retains its natural enzymes, healthy fats, and health benefits, cocoa loses much of its nutritionally-rich content in the roasting process.
