Our almonds are grown in California on a co-op of small family-held farms. The farmers we source from take great pride in the quality of their produce. Their almonds are USDA-certified organic and of the grade #1 supreme, California nonpareil variety. At Wildly Organic, we directly buy their almonds and then “activate” them using a special soaking and low-temperature dehydrating method in our facility. The end result is a delicious, crispy raw nut that our customers love!

Per FDA regulations, all almonds sold in the U.S. need to be quickly steamed for pasteurization purposes. We then cyclically soak and dehydrate the nuts at low temperatures. This activates their full nutritional potential and delivers a deliciously satisfying crunch!
Our bulk organic almonds are of the “nonpareil variety.” These are widely considered to be the largest, and possibly the sweetest, type of almond. Although almonds typically contain between 4-8% moisture, once they’re through our dehydration process, they contain only 1-2% moisture. This gives them a longer shelf life while still retaining the nuts’ taste and natural nutrients.
What Are the Benefits of Activating Almonds?
Nutritional cookbook author Sally Fallon and the Weston A. Price Foundation recommend soaking and dehydrating nuts at low temperatures to get the most health benefits out of them.
Nuts like almonds naturally contain a substance called phytic acid to help protect them against damage while they’re still growing on the tree. Once they mature, however, the phytic acid binds to other minerals within the plant. It transforms into a phytate which limits your body’s ability to absorb all of the nut’s nutrients.
To help eliminate the phytate compounds from our organic raw almonds, each batch goes through several rounds of soaking, rinsing, and drying. Referred to as “activating” the nuts, this process helps break down the phytate enzymes in our organic almonds so your body can fully absorb all the nutrients on offer.
