Nuts are rich in nutrients, but not all of these nutrients are readily available for absorption in your body. It’s because of a compound known as phytic acid, which binds to the nutrients of the nuts and creates an enzyme called phytate, which prevents nutrient absorption.

Soaking the nuts causes the enzyme to break down, releasing the nutrients. This process is known as “activation”. We activate all of our nuts before slowly dehydrating them at a low temperature to bring them back to their raw state with an extra crunch.
