This chickpea salad recipe is a tasty meal all on its own. Loaded with fresh veggies and flavor, the summer salad will easily tide you over.
However, the salad also tastes great when you add:

Salad Dressing
The salad tastes best when it is given time to marinate in the dressing and really absorb the flavors, but it can be thrown on and eaten immediately in a pinch.
Fresh Herbs
While the dressing in the chickpea salad does have an herb base, sometimes it is nice to add some fresh herbs too! The two herbs below will not only add some flavor but it is a great way to present the salad also!
- 1 tbsp fresh parsley chopped
- 1 tbsp fresh cilantro chopped
Keep in mind that the herbs are not crucial to the recipe, only a great addition.

- 3.5cups chickpeas (cooked or canned)
- 1/4cups red onion, diced
- 1 red pepper, diced
- 1 carrot, chopped
- 1tbs dried parsley
- 3/4cup cucumber, sliced and halved

Peel and chop all the vegetables. Combine all ingredients except the dressing in a large bowl and mix well. Pour the dressing over top, mix again. Let sit in the fridge to chill for 2-4 hours. Serve.
