It is thrown together quickly, full of color, and can be used as a full meal or a side dish to the main course.

Chickpeas are loaded with fiber and a good amount of plant-based protein. Which means, this chickpea salad will not leave you hungry anytime soon!

Protein in This Summer Salad

This chickpea salad recipe is a tasty meal all on its own. Loaded with fresh veggies and flavor, the summer salad will easily tide you over.

However, the salad also tastes great when you add:

  • Grilled chicken
  • Hemp hearts
  • Smokey tempeh

Switch up the salad by switching up the add-ins for a whole new flavor.


Salad Dressing

Fresh Herbs

  • 1 tbs fresh parsley chopped
  • 1 tbs fresh cilantro chopped

    Prep Time15 minutes
    Passive Time2-4 hours
    • 3.5cups Chickpeas (cooked or canned)
    • 1/4cups Red onion, diced
    • 1 Red pepper, diced
    • 1 Carrot, chopped
    • 1tbs dried parsley
    • 3/4cup Cucumber, sliced and halved
    • 1/3cup feta cheese (optional for dairy-free)
    • 1/2cup Wildly Organic Italian dressing
    1. Peel, chop, and prep all the vegetables. Combine all ingredients except the dressing in a large bowl and mix well.
    2. Pour the dressing over top, mix again. Let sit in the fridge to chill for 2-4 hours. Serve.
    3. Makes roughly 6 cups. This healthy chickpea salad makes the perfect dinner on a hot day. It is simple, light, and loaded with color. It also makes a tasty side dish the next day if you have leftovers. Whip up a big batch and enjoy the salad as is or with a few extras. Dairy-free, gluten-free, and perfect for summertime.
