Easy Herb Marinated Mozzarella Balls Recipe

Premium quality olive oil is the star of this easy marinated mozzarella recipe. The wonderfully fruity flavor of Wildly Organic Extra Virgin Olive Oil mingles with fresh garlic and herbs, giving fresh mozzarella a definite wow factor.

With a good olive oil, you don’t need to add much to it, really. That’s why this easy appetizer or snack recipe is so good! The hardest part about making marinated mozzarella? Waiting until tomorrow to eat it! It needs a little chill time in the fridge so all those flavors can do their thing.

You’ll just need a few simple ingredients:

  • High-quality olive oil like Wildly Organic Extra Virgin Olive Oil
  • Fresh mozzarella – pearls or slices
  • Your favorite fresh herbs (dried work as well)
  • Fresh garlic
  • Shallot or onion, sliced very thinly

Fresh mozzarella comes in several forms. I’ve chosen pearls because they’re super easy to use and make great bite-sized snacks. But feel free to use fresh mozzarella in any form you like. For example, take a whole ball of fresh mozzarella and slice it. Whatever type of fresh mozzarella you choose, draining the liquid and patting the cheese dry with a towel is the first step.

Next, prepare your fresh herbs. If you need to wash them, it’s best to let them dry several hours first. Or, at the very least, pat them dry very well with a towel. Snip or chop the herbs finely. Press or mince the fresh garlic. While you can use granulated garlic if you have to, I highly recommend using fresh. It’s flavor is so much better! Plus, fresh garlic is a wonderful health booster, especially during cold and flu season.

If you’re using dried herbs, here’s how to substitute for fresh. Always remember the 3:1 ratio. It takes 3 times as much fresh herbs to equal 1 measure of dried. So, for 1 tablespoon of fresh herb you’ll need 1 teaspoon of dried.

Shallots are lovely fresh and a little goes a long way. Peel off the papery outer layer and slice the shallot very thinly. Or use any type of onion — just be sure to slice it thinly. Finally, combine the herbs, garlic, sliced shallot, and mix well. Add the fresh mozzarella and gently stir to make sure the herbs and garlic get distributed evenly around the mozzarella. Then place in the refrigerator for at least 7 hours or overnight. If you’re using mozzarella pearls, a pint-sized mason jar is perfect for storage. However, any sealable, air-tight container works.

My favorite way to enjoy fresh mozzarella is just right out of the jar. They make a terrific, easy snack. But it’s a very versatile little dish.

  • Perfect for party buffets

    1. Drain and pat dry the mozzarella pearls. If using another form of fresh mozzarella, slice and pat dry.
    2. Combine the herbs, garlic, oil, and salt and mix well in the container you'll use to store the marinated mozzarella.
    3. Add the cheese and gently stir until all the cheese is coated with herbs and oil.
    4. Refrigerate for at least 7 hours or overnight.
