Apple Stuffed Chicken {Gluten-Free}

Choosing Cheese for The Stuffed Chicken
While this recipe calls for gouda, the choice is yours. Apples and gouda pair well together for fall flavors and the sweet mustard vinaigrette on top is a wonderful contrast to the gouda.
However, if you don’t stock gouda cheese at home, any mozzarella will work in a pinch. Choose a cheese that you and your family already enjoy and work with that, and make it your own.

- 4 chicken breastsboneless, skinless
- 1 applesliced
- Gouda cheeseslices
- 1/2teaspoon Wildly Organic Onion Powder
- 1teaspoon Wildly Organic Garlic Powder

- 1/4teaspoon sea salt
- 1teaspoon Avocado Oil
- 2teaspoon Dijon mustard
- 1teaspoon apple cider vinegar
- 2teaspoon Wildly Organic Coconut Syrup

Preheat the oven to 350 degrees and place the chicken in a baking-safe dish. Use a sharp knife to slice 4-5 deep cuts into the top of the chicken. Drizzle 1 tsp of avocado oil over the chicken breasts.

In a small dish, mix together the onion and garlic powder. Sprinkle the spices over the chicken.

If you haven't already, core the apple and slice it into 16-20 thin slices. Likewise, slice the gouda into small strips less than 1/4 inch thick.

Take your time placing one apple slice and two cheese slices into each cut in the chicken.

Once that's done, whisk together the mustard, remaining oil, apple cider vinegar, and coconut syrup. Drizzle over the chicken breasts.

Place in the oven and bake for 45 minutes or until chicken is cooked through. Once cooked through, turn the oven to broil for 2 minutes.

Remove the chicken from the oven and let sit for 5 minutes. Serve!
