What’s colorful, fresh, and sweet with a hint of spice?

Mango salsa!

A nice change from regular tomato-based salsa, mango salsa is light and fruity with a refreshing burst of flavor. It pairs well with chips, salads, tacos, and burritos, and tastes amazing atop grilled chicken or steak.

It’s also quite delicious on its own. Just eat it by the spoonful. I think that counts as a salad, doesn’t it?

The best mangoes are those picked (and eaten) in-season (which varies by type of mango), but this salsa can be made year round with freeze-dried mangos or Wildly Organic Dried Mangos!

The process of freeze-drying removes water from fruits and vegetables while maintaining most of the nutritional value, color, and texture. The fruit is freeze-dried in-season, which means you get a nutrient-packed, highly flavorful mango no matter the season! 

Freeze-Dried Mango Salsa

Avoid the mess associated with peeling and chopping mangoes by using WFN’s Freeze-Dried Mangoes that are already diced. You’ll be able to whip up this salsa in no time! 

It’s extremely helpful to keep a variety of freeze-dried items on hand for quick and easy food prep. Plus, since I keep these types of foods in the pantry, it saves room in the fridge and freezer. 

Red onion and jalapeños add a good deal of spice to this fruit-based salsa. Adjust the level of spiciness by using more or less red onion and jalapeño. Increase or decrease the amount of cilantro as desired to suit your taste.

It’s also worth noting that this salsa has a fairly chunky texture. I decided to leave the diced mango as-is (I like chunky salsa), but you could easily chop the mangoes before rehydrating to create a finer texture.

Freeze-Dried Mango Salsa

    Ingredients
    • 2cups freeze-dried mango (or Wildly Organic Dried Mango)
    • 2/3 cup water
    • 1/4cup tomato, diced
    • 1/2cup orange bell pepper, diced
    • 1/8cup red onion, finely chopped
    • 1tablespoon jalapeno, finely diced
    • 1/8teaspoon Wildly Organic Himalayan Pink Salt
    • 1 tablespoon lime juice(about 1/2 a lime)
    • 1/4cup fresh cilantro
    Instructions
    1. Place freeze-dried (or dried) mangoes in a bowl and pour water over the top. Stir to combine. Set aside to rehydrate.
    2. While the mangoes are rehydrating, stir together the red onion, jalapenos, tomatoes, and peppers.
    3. After about 10 minutes, the mango should have rehydrated sufficiently. Pour it into a strainer to remove any excess water. Once strained, chop mango and then add them to the onions, jalapenos, peppers, and tomatoes. Combine.
    4. Sprinkle salt over the top and stir.
    5. Chop the cilantro into small pieces. Add to the salsa and stir to distribute evenly.
    6. Add lime juice and toss to coat the fruit and vegetables.
    7. Enjoy with chips, as a side dish, on tacos, in a salad, or with chicken, steak, or burgers.
