Substitution Ideas

    Ingredients
    Instructions
    1. Preheat oven to 350F. Line a baking sheet with parchment paper.
    2. In a large bowl, whisk together the flour, powdered blueberries, baking soda, and salt. Set aside.
    3. In a small bowl, whisk together the coconut sugar, coconut syrup, oil, vinegar, and egg until emulsified.
    4. Pour the wet ingredients into the dry and mix completely. It will be a little stiff.
    5. Drop the dough by tablespoon-full onto a prepared baking sheet. Flatten slightly with the palm of your hand.
    6. Bake in preheated oven for 12 minutes or until edges are golden.
    7. Cool completely on wire racks.

    Store in an airtight container for up to a week.

    The cookies also freeze incredibly well. Make a big batch and store them in airtight containers in the freezer. Use frozen cookies within 6 months to prevent freezer burn and flavor loss.
