This French Potato Salad is sweet, tangy, and refreshing!

The perfect side dish for a summer barbecue

Potato salads are a classic at summer parties and potlucks. They are also great for a light lunch or dinner. However, most potato salad recipes are heavily dressed with mayonnaise and eggs, which can affect digestion, especially later in the day. This simple, healthy French Potato Salad is light and refreshing. It’s made with fresh herbs, cherry tomatoes, radishes, and delicious Wildly Organic French Dressing. You can put it together quickly, being a great dish when you’re in a rush or if you don’t want to turn the oven on. In addition, it would be a perfect side dish for a healthy Thanksgiving dinner.

Why you’ll love it

This salad is so easy to make: simply toss all of the ingredients together and it’s done! Bonus, it’s egg-free and vegan too!

The whole salad is bursting with flavor. While fresh herbs such as parsley, dill, rosemary, and thyme give the salad a fresh aroma, the radishes create a great crunchy texture. The cherry tomatoes offer vibrant colors and give a sweet taste to the salad, while the tangy-sweet taste of the Wildly Organic French Dressing brings all the flavors together, taking your salad to a new level. For the potatoes, you can use any general variety; however, in this recipe, I used a combination of yellow and red baby dutch potatoes. I love them for their creamy buttery taste and because they hold their shape while cooking better than other types.

The Wildly Organic French Dressing is not like other store-bought dressings. Made with only healthy ingredients, it tastes so refreshing. Both the Wildly Organic Italian Dressing (I used it on a delicious Italian Pasta Salad) and the Wildly Organic French Dressing are so full of flavors, making your creations have that extra something pushing them over the top. Once you taste them, you will not go back to other dressings, and you might find yourself using them on everything, from green salads and pasta salads to roasted vegetables and roasted salmon.
