Potato salads are a classic at summer parties and potlucks. They are also great for a light lunch or dinner. However, most potato salad recipes are heavily dressed with mayonnaise and eggs, which can affect digestion, especially later in the day. This simple, healthy French Potato Salad is light and refreshing. It’s made with fresh herbs, cherry tomatoes, radishes, and delicious French dressing. You can put it together quickly. A great dish when you’re in a rush or if you don’t want to turn the oven on. In addition, it would be a perfect side dish for a healthy Thanksgiving dinner.

The whole salad is bursting with flavor. While fresh herbs such as parsley, dill, rosemary, and thyme give the salad a fresh aroma, the radishes create a great crunchy texture. The cherry tomatoes offer vibrant colors and give a sweet taste to the salad, while the tangy sweet taste of the French dressing brings all the flavors together, taking your salad to a new level. For the potatoes, you can use any general variety; however, in this recipe I used a combination of yellow and red baby Dutch potatoes. I love them for their creamy, buttery taste and because they hold their shape while cooking better than other varieties.

- 3pounds baby Dutch potatoes (red & yellow mix)
- 1cup cherry tomatoes, halved
- 1/2cup radishes -thinly sliced
- 1teaspoon salt
- 2 1/3cups French dressing
- 1/4cup fresh herbs (parsley, dill, rosemary, thyme)

Rinse the potatoes and dice them into small cubes. Add the potatoes to a saucepan. Add 1 teaspoon of salt and enough water to cover the potatoes.

Cook on medium heat for about 10-15 mins, until the potatoes are soft and are easily pierced with a fork.

Once the potatoes are cooked, drain the water, rinse with cold water, and set aside in a bowl.

Add the tomatoes and radishes to the potatoes.

Add the fresh herbs and mix.

Add the French dressing and toss until everything is covered evenly with the dressing.
