Moroccan Chicken Dinner {Gluten-free, Healthy}

The first time I made this Moroccan Chicken, it was a crisp fall day. The whole house filled with this sweet inviting smell that attracted the family to the kitchen wondering what I was cooking. The dinner turned delicious and was a hit. Everyone had seconds, and some even had thirds! What I love about this recipe is that it is so easy to make; you can pretty much throw the ingredients together in a pot or Dutch oven and let it cook at slow temperature, without needing much attention.

- 1 small onion, diced
- 2-3Tablespoon Wildly Organic Olive Oil
- 4cups water or organic chicken stock
- 8pieces organic free-range chicken thighs, bone-in (about 4 pounds)
- 1cup Wildly Organic Dried Mangoes, diced
- 1/2cup organic golden raisins
- 1can organic chickpeas
- 1teaspoon Wildly Organic Himalayan Pink Salt
- 1/2teaspoon cinnamon
- 1teaspoon paprika
- 1teaspoon cumin
- 1/2teaspoon turmeric
- 1/3cup Wildly Organic Almond Butter
- 3tablespoon honey

Dice the onion and add to a saucepan or a Dutch oven with 2-3 tablespoons of Wildly Organic Olive Oil.

Sauté the onions until translucent.

Meanwhile, dice the Wildly Organic Dried Mangoes.

Add the water or chicken stock, chicken thighs, chickpeas, dried mangoes and golden raisins.

Add the salt, cinnamon, turmeric, paprika, honey, and Wildly Organic Almond Butter.

Cook on low heat for about 45 mins to 1 hr, using a meat thermometer to insure the chicken is cooked thoroughly.

Serve over rice, quinoa, or mashed potatoes.
