Which is why I pretty exclusively make no-bake desserts during the summer time.
I do not want to turn on my oven and make our home’s temperature rise even a degree if it’s over 80° outside… Because over 80° outside almost inevitably leads to almost 80° inside after a few days in a row.
Still, my ravenous teenagers want healthy summer snacks and desserts.
So, I go with easy, quick, healthy, no-bake snacks and desserts as often as possible — like these Paleo Dark Chocolate & Salted Caramel No-Bake Treats!
Paleo Dark Chocolate & Salted Caramel No-Bake Treats
With just 5 healthy and delicious ingredients, how can you go wrong with these little bon-bons (or “cookie bites” as my kids like to call them)?
These no-bake treats are perfect for everyone because they’re allergy-friendly, paleo, vegan, and have such amazing Wildly Organic ingredients, too!
They’re nut-free, dairy-free, egg-free, peanut-free, soy-free, gluten-free, grain-free, and even sugar-free!
Wildly Organic’s Coconut Syrup tastes just like a dark caramel to me. So, when you add Wildly Organic’s quality Himalayan salt to the mix, plus Wildly Organic’s flavorless Expeller Pressed Coconut Oil, you get a yummy salted caramel treat with only Real Food ingredients.

What no-bake treats and desserts do you make when it’s warm?
- 2-1/4cups Wildly Organic Fine Coconut Flakes
- 1/4 cup Wildly Organic Coconut Syrup
- 1/4 cup Wildly Organic Expeller Pressed Coconut Oilsoftened
- 1/2teaspoon Wildly Organic Himalayan Salt
- 1/3cup chocolate chips
- 1tablespoon Wildly Organic Expeller Pressed Coconut Oil

To a high-speed blender or food processor, add the coconut flakes, coconut syrup, coconut oil, and salt.

Process on high speed until the ingredients come together to form a "dough" that folds in on itself.

Using a 1-tablespoon cookie dough scoop, scoop out balls of this "dough" onto a parchment-lined baking sheet.

Place in the freezer for 10 to 15 minutes.

While the no-bake treats freeze, add the chocolate chips and remaining coconut oil to a double boiler or bowl placed over simmering water.

When melted, whisk until smooth, then spoon gently onto the frozen no-bake treats.

Garnish with additional coconut flakes and/or a sprinkling of salt.

Return to the freezer for 5 more minutes, or until the chocolate has set.

Store in the fridge or freezer until ready to eat.
