My children are jell-o fanatics. Pick a flavor, they will eat it. It doesn’t matter if they use a spoon, if they can pick it up with their fingers, if it has fruit in it, or if it does or doesn’t have whipped cream on top.

It makes dessert easy at home. But the jell-o found in a box is full of ingredients that I don’t want my children eating AT ALL  — artificial flavors, artificial colors, and tons of sugar.

It’s time to take jell-o into my own hands!

What I came up with was jell-o with no white sugar, with real fruit, and no artificial colors. Score!

And it’s pretty easy to make. Double score!

It’s also delicious — sweet and tart at the same time. When I brought it out to be taste-tested by my family, they went crazy and demolished the first batch in 20 minutes! I had to hold them back so they wouldn’t eat it before I could take photos for you!

Jell-o With Freeze-Dried Fruit??

Yes!

This easy recipe has just 4 ingredients — organic apple juice, gelatin, Wildly Organic’s Coconut Syrup, and dreeze-dried raspberry powder. Raspberry powder is the perfect flavoring for this jell-o recipe, it dissolves into the apple juice beautifully and adds fiber and vitamin C to the jell-o.

Freeze-dried fruit also saves money. After all, it is January and fresh raspberries aren’t exactly in season right now. I love that I can have a berry-filled treat any time of year with freeze-dried berries!

Coconut syrup is delightfully sweet, dissolves easily in liquid, and is low on the glycemic index. That means it’s less likely to skyrocket and drop your blood sugar. (And less likely to elicit a crazy sugar high in the children.)

    Ingredients
    • 2cups organic apple juice
    • 1/2cup powdered freeze-dried raspberriesor Berry Blend
    • 1/4cup Wildly Organic Coconut Syrup
    • 2packets unflavored organic gelatin
    Instructions
    1. In a medium sauce pan, whisk together apple juice, raspberry powder, and coconut syrup.
    2. Cover and bring to a light boil stirring occasionally.
    3. In a bowl, add the gelatin.
    4. Pour hot liquid over the gelatin and whisk until the gelatin is completely dissolved.
    5. Pour the liquid into a glass dish and chill for at least 3 hours.
    6. Cut into squares and enjoy.
