Whole30™ Chicken Salad
This Whole30 Chicken Salad is a delicious and light meal for hot summer days, barbecue dinners with friends and family, and special occasions. Made with fresh organic ingredients, this chicken salad gluten-free, is easy to make, and can be made ahead of time.
Ingredients for Whole30 Chicken Salad
Organic Free-range Chicken – In this recipe I used approximately 3 cups of cooked chicken, which was about 3 small chicken breast that I boiled. However, you can use all different types of chicken. It could be boiled, rotisserie, baked, or any other form of leftover cooked chicken you might have on hand (just be aware of spices on precooked chicken).
Apples (organic) – I love to add apples to my chicken salad recipe. They give a lovely sweetness and crunchiness to the salad. Try to use organic apples when you can, since apples are on the top 10 dirty dozen list.
Organic Celery – Celery also adds crunchiness and its unique flavor to the salad, while providing extra vitamins and minerals.
Grapes (organic) – Not only pleasing to the eye, but also easy on the taste buds! Grapes offer sweetness and brightness to the chicken salad. Organic grapes are a great choice. In this salad I used red grapes that I halved. You can use any other type of grapes you might prefer, but a seedless variety is best.
Tomatoes (organic) – Not a conventional ingredient in most chicken salads, tomatoes are a great addition to a chicken salad. They offer bright flavor and color, and a burst of vitamins (simply do not include if you have a tomato/nightshade allergy).
Red Onions (organic) – Red onions are optional if you would rather not have an onion flavor in your salad (or the possibility of onion breath). However, they do offer a great crunch to the chicken salad. Plus they add that je ne sais quoi needed to push this dish from great to extraordinary.
Mangoes – I love to add mango to my chicken salad. They offer a refreshing sweetness and creaminess to the salad. The mangoes are what delight my family most about this chicken salad recipe.

Tips on making a great Whole30 Chicken Salad
Use organic ingredients as much as possible, especially the apples, celery, grapes, and tomatoes, since they all are on the top 10 dirty dozen list.
Tip: Prepare ingredients ahead of time to be able to throw the salad together quickly.

- 2cups Apples, diced (about 3 small apples)
- 1cup Celery, diced (about 3 celery stalks)
- 1/2cup Tomatoes, diced
- 2cups Red Grapes, halved
- 1small red onion, finely chopped
- 1ripe mango, diced
- 6-8tablespoons Wildly Organic Mayonnaise
- 1/2teaspoon Wildly Organic Pink Himalayan Salt

In a large bowl, add the chicken, apples, celery, tomatoes, grapes, mango, and red onion.

Add the mayo and salt and mix well until all ingredients are well combined.

Add extra salt and mayonnaise if needed.

Cover and refrigerate until ready to serve.
