Prep the carrots and place them into a large pan. Add 1-2 inches of water. Cover and heat over medium-high heat.

Cook for 5-7 minutes or until carrots are mostly tender. Drain the remaining water from the carrots.

Place the pan back over the heat and add the coconut syrup. Cook, tossing frequently until the syrup is mostly evaporated.

Toss the carrots in sea salt and remove from heat. Serve.
