Often when you hear “curry,” you think spicy hot. But, curry doesn’t have to be spicy!
Curry is a vast world of flavors, colors, and intensity. Typically, yellow curries are milder, which is what I used for this easy roasted potatoes recipe. My family doesn’t enjoy spicy foods like I do, unfortunately.
If that’s the case for you, too, add a dash of hot sauce to your serving to ramp up the heat a bit!

It’s so easy to make these curry roasted potatoes. In fact, it only requires 5-ingredients! They’re naturally gluten-free, Paleo, vegan, and Whole30-friendly, so the whole family can enjoy these flavorful roasted potatoes.
These tasty spuds go well with so many main dishes:
- Change it up on burger night and serve these potatoes instead of french fries.
- Try a soup and potato bar for dinner. Spicy curried potatoes topped with cream cheese and chives, yum!
- Grilled chicken, steak, and fish all pair perfectly with curry baby potatoes,
- Or, for a vegan cookout, try along with grilled portobello mushrooms instead of meat.
Oven Bake Or Air Fry Your Curried Baby Potatoes
These bite-sized tri-color potatoes cook quickly, so you can get your spud on in a hurry. Whether you choose to oven bake or air fry they should take 20 minutes or so to bake.
Whether oven baking or air frying, you’ll want to preheat. If you use a stoneware baking pan pop that in the oven when you preheat it. Otherwise, it will take longer for your taters to bake.
Also, with either method, you’ll want to stir the potatoes around (or shake the basket several times) for even cooking. This is more important with the air fryer than the oven, but stirring them while oven baking is helpful.
However you cook these tasty little spuds, the combination of earthy red palm oil, fragrant curry, and creamy potato is simply delightful. They make a terrific side dish any day of the week.

Will You Make These 5-Ingredient Curry Roasted Potatoes Mild or Spicy?
- 2tablespoons Wildly Organic Red Palm Oil
- 3pounds tri-color baby potatoesor other bite-sized potatoes
- 2 to 4teaspoons curry powdermore or less to taste
- 2teaspoons Wildly Organic Pink Himalayan Salt
- 1/2 teaspoons ground black pepper
- 1/4cup fresh parsleyfinely chopped (optional)

Preheat oven or air fryer to 375 degrees. If using a stoneware baking pan, place in the oven when you preheat.

Gently melt the red palm oil.

In a mixing bowl, carefully mix the baby potatoes and palm oil so that each potato is coated with the palm oil.

Mix together the curry powder, salt, and pepper then sprinkle half the spice mixture over the potatoes and stir well to coat.

Sprinkle the rest of the spice mixture over the potatoes and stir well again.

Evenly spread the seasoned potatoes onto a baking sheet or the preheated baking pan and bake for 20 to 30 minutes or until the potatoes are fork-tender.

If using an air fryer, add the seasoned potatoes to the basket of your air fryer and air fry for around 20 minutes or until fork-tender, shaking the basket or stirring the potatoes several times.

Garnish with parsley flakes if you wish and serve.
