This cheesy herbed cauliflower rice is full of creamy, cheesy, herby goodness. Perfect for keto dieters, low-carbers, grain-free eaters, and anyone who loves cauliflower.

One thing I love about red palm oil is its flavor. Rich, ever so slightly earthy – like a carrot. However, don’t worry! Your cheesy herbed cauli rice isn’t going to taste like carrots.

Make This Cheesy Herbed Cauli Rice On The Stove Or In The Oven

While we prefer this cauliflower rice baked, you can just as easily just make it on the stovetop. Cook the cauli rice in red palm oil first to cook off any water. This keeps your cheese sauce from getting watery.

After combining the cheese sauce and cauliflower rice, simply simmer for a few minutes until the cauli rice is as tender as you like. Then go ahead and serve it.

But if you’re going to bake it, sprinkle some cheese on top before popping into the oven. Bake for 15 to 20 minutes, or until bubbly throughout.

It will be very hot so let it cool for 5 to 10 minutes or so before serving. Making it in a cast-iron skillet makes it super easy! From the stovetop to the oven, then the cast iron retains heat well so it will stay nicely warm while you get the rest of the meal together.

Alternatively, you can bake it in a casserole dish.

    Ingredients
    Herbed Cheese Sauce
    Instructions
    1. Preheat oven to 350F (if you're baking the cauliflower rice).
    2. In a cast-iron skillet or another oven-proof skillet, melt the red palm oil and add the riced cauliflower.
    3. Cook for 5 to 7 minutes, stirring occasionally, or until water has cooked off.
    4. Meanwhile, prepare the herbed cheese sauce. In a saucepan, melt butter and cream cheese, whisking together.
    5. Add heavy cream and whisk well.
    6. Add cheese (if baking in the oven, reserve a few tablespoons to sprinkle on top before putting in the oven) and seasonings and whisk well to combine until cheese is fully melted.
    7. Pour cheese sauce over the cauliflower rice and stir well to combine.
    8. If not baking in the oven, bring to a simmer and cook for a few minutes then serve.
    9. If baking, sprinkle reserved shredded cheese over the top and put the skillet in the oven.
    10. Bake for 10 to 15 minutes or until bubbly throughout.
    11. Allow to stand for 5 to 10 minutes before serving.
    Recipe Notes

    If baking in a casserole dish, be sure to cook the cauli rice in red palm oil as directed. Make the cheese sauce and combine before pouring into a casserole dish, then bake.
