Cauliflower rice is life-changing when you’re following a carb-conscious lifestyle. It’s similar enough to rice which makes it great in casseroles and side dishes. This cheesy herbed cauliflower rice is full of creamy, cheesy, herby goodness. Perfect for keto dieters, low carbers, grain-free eaters, and anyone who loves cauliflower.

Red Palm Oil – Antioxidant Deliciousness!

One thing I love about red palm oil is it’s flavor. Rich, ever so slightly earthy – like carrot. However, don’t worry! Your cheesy herbed cauli rice isn’t going to taste like carrots.

Red palm oil gives this dish a lovely yellow color without using artificial colorings, too. But the best part of red palm oil is its high antioxidant content. You’re nourishing your body with this healthy, versatile, tropical fat.

  • Red palm oil contains more beta-carotene, vitamin E and tocotrienols than any other oil.
  • Remains stable when used for cooking.
  • It is not hydrogenated, nor processed with solvents such as hexane, and does not contain any trans-fatty acids

Once concern about red palm oil is sustainability and responsible growing practices. No worries! Wildly Organic Red Palm Oil comes from an ethically sourced farm in Malaysia.

Make This Cheesy Herbed Cauli Rice On The Stove Or In The Oven

While we prefer this cauliflower rice baked, you can just as easily just make it on the stove top. Cook the cauli rice in red palm oil first to cook off any water. This keeps your cheese sauce from getting watery.

After combining the cheese sauce and cauliflower rice, simply simmer for a few minutes until the cauli rice is as tender as you like. Then go ahead and serve it.

But if you’re going to bake it, sprinkle some cheese on top before popping into the oven. Bake for 15 to 20 minutes, or until bubbly throughout.

It will be very hot so let it cool for 5 to 10 minutes or so before serving. Making it in a cast iron skillet makes it super easy! From the stove top to the oven, then the cast iron retains heat well so it will stay nicely warm while you get the rest of the meal together.

Alternatively, you can bake it in a casserole dish.

We enjoyed this easy Cheesy Herbed Cauli Rice along with baked chicken breasts and spicy roasted green beans. So delicious and satisfying!

Easy, cheesy dishes like this cheesy herbed cauliflower rice are great for family dinners, taking to potlucks, or just making for lunch. If you have grain free or low carb/keto eaters at your dinner table, then everyone will be able to enjoy it!
