More often than not we start off the day in a mad rush to get out of the house. This means that a healthy, fueling breakfast often gets put on the back burner.

Take back your mornings and load up on protein-rich fuel with these breakfast wraps! Made with both eggs, Italian sausage, and wild rice to keep you full, these wraps can have a bit of a kick depending on which sausages you choose.

These burrito wraps have all the classic Mexican flavors which make for a fun start to your day. However, they’re also very customizable.

This healthy breakfast burrito recipe calls for diced peppers but mushrooms or even spinach would work too.

Amp them up with some feta or your favorite dairy or plant-based cheese of choice. If using feta, simply add it into the bowl when you mix everything together. If you’re using shredded cheese, scramble it into the eggs so it melts fully. The salsa you choose will also have an impact on flavor so keep that in mind.

Tip: If you’re making these ahead of time and planning to re-heat later. Omit the avocado! Avocado doesn’t “re-heat” well so it’s best avoided all together. Either omit it completely or add it in after you’ve reheated. A good hack also is to cook the rice ahead of time and just have it in the fridge ready to toss in.

These breakfast burritos are loaded with healthy ingredients to fuel your day. They can be made ahead of time and stored in the fridge or even the freezer. Simply wrap them in wax paper and reheat them on low in the oven.

    1. Slice the sausage links lengthwise and cook them in a pan over medium heat with the tablespoon of oil. Once cooked, chop into smaller pieces and place into a large bowl.
    2. Scramble the eggs and add in the diced peppers. Pour into skillet and cook to desired doneness.
    3. Add the eggs and bell pepper mixture, cooked rice, and salsa into the bowl with the sausage. Mix well. Pit and peel the avocado, cutting it into slices.
    4. Lay out the wraps and portion the burrito filling into the wraps. Top the wraps with a few slices of avocado.
    5. Roll and enjoy!
