Easy Slow Cooker Roast Beef Recipe
Cooking roast beef in the slow cooker is my favorite way to prepare it. It’s quick, easy, and reliable. The meat always turns out tender and delicious. Plus, it’s much less stressful than cooking in the oven!
This crock pot roast beef is elevated by the inclusion of high-quality olive oil and coconut vinegar from Wildly Organic.
The olive oil adds a rich flavor and helps the roast retain moisture while the coconut vinegar helps tenderize the meat.
I generally cook this roast beef on its own and prepare the side dishes separately, but you could add potatoes, onions, and carrots to the crock pot for an all-in-one slow cooker meal. Just be sure to cut the veggies in large chunks so they don’t get too soft.
I have included my favorite herb and spice blend in the recipe below, however, this could be adjusted to suit your preferences. One thing I wouldn’t change is the quality of the olive oil and salt. Both bring extra nutrition to the meal. Lower quality salt and olive oil contain very little nutritional value.

- 13-4 pound chuck roast
- 1/8cup Wildly Organic Olive Oil
- 1Tablespoon coconut vinegar
- 1teaspoon Wildly Organic Himalayan Pink Salt
- 1Tablespoon dried rosemary
- 2teaspoons dried thyme
- 1/2teaspoon garlic powder
- 1/2teaspoon onion powder
- 1/2teaspoon ground black pepper

Place beef in slow cooker. Pour olive oil and coconut vinegar over the top.

Sprinkle salt, rosemary, thyme, garlic powder, onion powder, and pepper evenly over the roast beef.

Cook on low for 7-8 hours or high for 5 hours or until fork tender.

Shred and serve with some of the meat juices drizzled over the top.
