Garlic Mushroom Rice {Gluten-Free, Vegan}

Bump up your dinner meal with this Mushroom Garlic Rice! A flavorful twist on a simple dish this rice dish makes the perfect addition to any chicken-based meal.

“What’s for dinner” is a common question around… 4pm. And a frustrating one! Instead of guessing, or scrambling to throw something together, have a plan, and keep dinnertime stress-free.

As a side dish on its own or the base of a stir fry, this mushroom garlic rice is a tasty addition!

While it’s not a 30-minute meal (you do need to wait for the rice to cook) it can be made in advance and kept in the fridge.

Why Choose Wild Rice

Wild rice is a great way to switch up your dinner menu without actually changing too much. Most people opt for white rice which has been stripped of many of its nutrients and fiber, but Wildly Organics Wild Rice has not been genetically harvested nor is it stripped in processing, keeping all of the healthy fiber fully intact.

Wild rice does give a chewier texture to the dish which helps you not inhale your meal. And when combined with garlic it’s a great, flavorful side dish on its own.

Sneaking Veggies In

One of the reasons I love this recipe is that the rice itself contains mushrooms. This means that there’s one more veggie on the dinner table and many more nutrients.

While the mushroom garlic rice would be wonderful as the base for a veggie-based meal, even as a side dish to grilled chicken at least you know you’re getting in some nutrients.

How to Use This Side Dish?

Because dinnertime is normally a bit chaotic, plan ahead and reduce some of the insanity! I make a double batch of this garlic rice and store the second batch in the fridge.

The first night we normally have it as a side dish with our protein and the second night we use it as the base for a stir fry, Buddha bowl or what have you.

Cooking once and using twice helps make evenings a little more enjoyable as we’re not scrambling around for dinner.

Plus, the garlic rice adds a whole new flavor boost to a traditional stir fry recipe and a few more nutrients too!

A simple dish that can be used on its own or paired with a bowl! This mushroom garlic rice is a nice flavor addition to any meal.
