Garlic Mushroom Rice {Gluten-Free, Vegan}

“What’s for dinner” is a common question around… 4pm. And a frustrating one! Instead of guessing, or scrambling to throw something together, have a plan, and keep dinnertime stress-free.
As a side dish or the base of a stir fry, this mushroom garlic rice is a tasty addition!
While it’s not a 30-minute meal (you do need to wait for the rice to cook) it can be made in advance and kept in the fridge.

Wild rice is a great way to switch up your dinner menu without actually changing too much. How to Use This Side Dish
Because dinner time is normally a bit chaotic, plan ahead and reduce some of the insanity! I make a double batch of this garlic rice and store the second batch in the fridge.
The first night we normally have it as a side dish with our protein and the second night we use it as the base for a stir fry or Buddha bowl.
Cooking once and using twice helps make evenings a little more enjoyable as we’re not scrambling around for dinner.
Plus, the garlic rice adds a whole new flavor boost to a traditional stir fry recipe and a few more nutrients too!

- 1cup Wildly Organic Wild Rice
- 3cloves garlic
- 4cups water
- 2.5tbs Wildly Organic Olive Oil
- 8 button mushroomschopped
- 2cloves garlicminced
- 1/4tsp sea salt
- 1tbs dried parlsey
- green onionsfor garnish, optional

Peel the three cloves of garlic and cut them in half. In a large pot add the rice, water, and halved garlic. Bring the mixture to a boil.

Reduce to medium heat and let simmer for 20 minutes. Turn the stove off and cover the rice. Let sit for 5 minutes.

While the rice cooks, in a large pan or wok heat the minced garlic and olive oil over medium heat. Cook the garlic for 3-5 minutes until it begins to brown slightly. Add in the mushrooms and sea salt. Cook for six more minutes until mushrooms are cooked through.

Drain any remaining water from the pot of rice and use a spoon to remove the cloves of cooked garlic. Add the rice to the mushroom mixture and top it with parsley. Mix well. Cook 1-2 more minutes and remove from heat. Garnish with green onions if desired.
