The robust flavors and beautiful colors of Greek salad are hard to beat.

Simple to prepare, Greek-style salad with olive oil dressing is the perfect side dish for chicken or fish, pasta, casseroles, and sandwiches. Great for lunch or dinner, make this into a one-dish meal by topping with protein, such as a few strips of roasted chicken or baked fish.

Since there is a lot of chopping, Greek salad is a wonderful dish to make with friends or family. Stand around the kitchen island and chat while each of you chops a vegetable. The salad will be ready in no time!

Greek-Style Salad with Olive Oil Dressing

A good Greek salad recipe always includes three things: tomatoes, olives, and feta cheese. But, the most important (and often overlooked) ingredient is a high-quality olive oil for the dressing.

We’ve discussed the issues with the olive oil industry before, and it’s no small thing to ensure you have a reputable source available. (FYI: Wildly Organic’s Olive Oil fits the bill.)

High-quality olive oil will not only provide great health benefits, but it also imparts the most delicious flavor!

For the salad, I love to use heirloom baby tomatoes. The variety of color adds so much to the visual look of this salad. Regular baby tomatoes or chopped Roma tomatoes would also work well if you don’t have heirloom available (or are not as into the visual look as I am!)

Traditional Greek salad does not use lettuce, but I have included it here because I usually add it in order to stretch the salad further and make it more of a “meal” salad. If you’d like a more traditional Greek salad, leave out the lettuce and use about half the amount of dressing.

In the recipe instructions below I have shared how to make the salad in a large bowl for a crowd. However, I also love to leave the ingredients separate and let everyone build their own plate to suit their own preferences.

Once you start making this salad, you’ll want to have it as part of your regular meal rotation. It’s so tasty and bursting with nutrients too!

    Ingredients
    Dressing
    Salad
    • 1head Romaine lettuceor two Romaine hearts
    • 1medium cucumber
    • 1cup baby tomatoesor 2-3 Roma tomotes
    • 1small red onion
    • 1medium green pepper
    • 1/2cup kalmata olives
    • 1/2-3/4cup feta cheese
    Instructions
    1. Make the dressing by whisking all dressing ingredients in a bowl or placing in a jar and shaking to combine.
    2. To prepare the salad, tear the romaine lettuce into bite-sized pieces and place in a large bowl.
    3. Slice the tomtatoes. If using baby tomatoes, slice in half. If using Roma tomatoes, slice into wedges.
    4. Peel cucumber, cut in half (lengthwise) and cut into thick slices.
    5. Slice bell pepper into rings.
    6. Cut red onion into thin slices.
    7. Combine all salad ingredients (except feta cheese) in a large bowl and toss to combine.
    8. Toss with salad dressing and sprinkle with feta.
    9. Serve with a side of crusty bread.
