What Is Cacao Powder?

Cacao powder is created by grinding down cacao beans and extracting the cacao butter (the fat component of the cacao bean). Most cacao products have undergone fermentation unless specified as being non-fermented. Fermenting reduces the cacao bean's natural bitterness while also enhancing the cocoa flavor. Wildly Organic’s Fermented Cacao Powder is naturally fermented in banana leaves for three to five days.

Conventional cocoa powders are ground under high temperatures of up to 300° F. This high heat processing degrades the overall nutrient profile and health benefits mentioned previously. The difference between our cacao powder and nibs vs. others is that ours are raw. 

Raw cacao powder is made by cold-pressing unroasted cacao beans at a temperature that doesn't exceed 104°F. The living enzymes and nutritional benefits (for which cacao is so well known) are preserved using this method. You can use this heavenly cacao powder in various recipes to experience the incredible flavor of chocolate.

What Are Cacao Nibs?

Cacao nibs are the chopped-up version of the peeled, raw, unprocessed cacao beans. You can grind up your own cacao nibs and extract the oil, but who has time for that? 

Cacao nibs vs. powder are about half butter/oil and half fiber residue. They are fantastic replacements for chocolate chips in your recipes. Remember that cacao nibs are bitter, not sweet, like chocolate chips. If you prefer a milder taste, use non-fermented cacao nibs.
