Nut Butter Ice Cream {Vegan, Gluten-Free}
This thick, rich, and creamy Nut Butter Ice Cream is absolutely kid-friendly with a twist of health to it. Its vegan, gluten-free, and super easy to make.
Since summer has started, my kids are always hot and want cold treats. Ice cream is usually favored and I guess the easiest as well.
I like to include some healthy ingredients when I make it at home and this one comes as an excellent summer treat for all ages and at any time of the day.
Healthy Ingredients for Nut Butter Ice Cream
Wildly Organic Chia Seeds – It’s an excellent vegan egg replacement. At the same time, it is high in protein and fiber. After soaking it forms chia gel which helps in gluing the ingredients.
Wildly Organic Nut Butter – I used the nut butter medley. A mix of nuts making this treat rich and nutritious. It is also a great way of including a variety of healthy nuts into your diet.
Wildly Organic Coconut Milk Powder – This eases the process of making dairy-free milk and provides a creamy texture to this ice cream.
Wildly Organic Coconut Sugar – It’s a healthier substitute for refined sugar.

Alternate Ways to Make Nut Butter Ice Cream
This is an easy ice cream for which you do not need any elaborate ice cream maker. A simple one would work. If you do not have an ice cream maker then you may enjoy it as popsicles too. Simply blend all the ingredients (including coconut cream and goji berries) in a blender. Then fill your popsicle molds and freeze overnight.

In a blender, combine soaked chia seeds, nut butter medley, coconut milk powder, coconut sugar, and water. Blend it smooth.

Pour the blended smoothie in your ice cream maker. Turn it on to churn and pour the prepared-to-cream-consistency Wildly Organic Coconut Milk Powder while churning.

After about 15 minutes, add goji berries in the ice cream maker without stopping it. Continue churning the ice cream for another 5-10 minutes or until it thickens and becomes creamy.

Spoon it out in a freezer-friendly bowl and freeze it for a minimum for 6 hours or overnight.
