Easy Chocolate Almond "Nice" Cream {Vegan, Paleo, Gluten-Free}

Ice cream is a staple for both kids and parents. On a hot day, it’s deliciously refreshing but on a regular day, it’s a tasty indulgence! And this ice cream variation is simply a healthy twist of a classic.

Using a base of frozen bananas is what makes this ice cream creamy in consistency, most similar to soft-serve ice cream.

And because the ice cream uses bananas, this healthy recipe is naturally gluten-free and vegan. Everything else is just delicious add-ons.

Vegan ice cream may sound a little odd, but I’ve been rocking this ice cream alternative for years and have never looked back. Not only is it tasty (bananas are a natural sweetener) but making your own allows you to customize the flavors.

Wildly Organics Fermented Cacao Powder is what gives the ice cream a chocolate flavor. Cacao powder is loaded with antioxidants, calcium, and iron which helps give this chocolate ice cream a nutrient boost.

Couple that with the healthy fats from the almond butter and this vegan "nice" cream is even somewhat healthy

A few things to note:

You do need a very powerful blender for this recipe. I have a Vitamix which can easily “cream” the bananas. However, a strong food processor should work too. The bananas need to be frozen to work so there’s a lot of work on the blender and you may need to stop and scrape down or tamper.

The "nice" cream is best served immediately after making it or after being frozen for 10-15 minutes. If you freeze it longer than that it will solidify and that makes it extremely hard to scoop out.

    Instructions
    1. In a powerful blender, combine all of the ice cream ingredients, reserving 1 tbsp of the almond butter. Blend until smooth. You may need to use a tamper.
    2. Once smooth, use a silicone spatula to scrape out the ice cream into a bowl and swirl in the remaining almond butter.
    3. Portion into bowls and top with chocolate sauce and pecans.
