Pecan Stuffed Baked Apples {Paleo, Grain-Free, Gluten-Free, Vegan}

Is there anything more quintessentially Autumn than apples and spices? Pop these super easy grain-free Pecan Stuffed Baked Apples into your oven and your home will fill with the apple-spice aromas of Fall. They will also tickle your taste buds with those classic autumnal flavors and nourish your body with healthy goodness.

These pecan-stuffed baked apples got a 3 out of 4 at my house. Why only 3? Simply because my hubby doesn’t really like apples. I can not wrap my mind around that! Apple pies! Apple cakes! Homemade applesauce! How can you not like apples? We have an apple tree in the backyard and every year I eagerly await the time when they are ripe and ready to harvest.

This year we’ll definitely be making these yummy baked stuffed apples often. They are grain free, which is a plus for those with gluten or grain sensitivities. They do take a bit of time to bake but while they are your home will be filled with the most wonderful fall-spice aroma.

We also camp every Autumn and my daughter wants to try to make them over the campfire. I have a lovely cast iron Dutch oven that I think will work wonderfully. I plan to make the filling ahead of time so it will be a simple matter of coring the apples and stuffing them.

What do you stuff them with, you may ask? This simple mixture has Wildly Organic pecans, coconut sugar, coconut oil, vanilla, and a lovely blend of spices! It doesn’t get much easier than that!

Choosing The Perfect Baking Apple

All apples are good, but not all apples are good for baking. You want to choose an apple that will hold up well to baking and not turn mushy or mealy. I chose organic Gala apples as they are our favorite for snacking and hold up well for baking. They are also sweetened, so you don’t need to use a ton of extra sweetening in your filling.

Some great apples for baking include:

  • Granny Smith apples are the old-standby of baking apples. They are more tart than a red apple, which can be a nice contrast to the sweetly spiced nut filling in this recipe.
  • Honeycrisp is also another favorite for snacking but also works very well for baking, thanks to their firm structure.
  • Jonagold apples are tart with a nice amount of sweetness and also hold up well in the oven.
  • Braeburn is another great baking apple variety. Great flavor and bake up juicy, not mushy!

No matter what apple you choose the combination of buttery pecans, sweet coconut sugar, good-for-you coconut oil, and Fall-inspired spices will make your belly happy.

    Ingredients
    Instructions
    1. Preheat oven to 350.
    2. Into the bowl of your food processor add pecans, coconut sugar, coconut oil, vanilla, spices, and salt. Pulse to combine -- you can just pulse a few times for coarsely chopped nuts or more finely to suit your preferences.
    3. Next, wash your apples and carefully remove the core using an apple corer or paring knife. Be sure to leave the bottom intact, about half an inch or so.
    4. Divide the filling evenly between all your apples, packing into the core cavity.
    5. Place your stuffed apples into a baking dish then pour 3/4 cup of boiling water into the bottom of the baking dish
    6. Pop into your preheated oven and allow to bake up to an hour, until your apples are soft. 
    Recipe Notes

    If your apples are large or you remove a lot from the inside you  might need more filling.

    These apples are best fresh out of the oven but are still good reheated (and even cold).
