Texas Pecans: Raw, Soaked and Dried, Certified Organic Pecans

Our fresh Texas pecans are incredibly delicious and certified organic. These premium raw pecans are full halves, not broken into pieces. Grown on a small family pecan farm in Texas, they are awarded with the highest possible quality grade. We soak the nuts and dehydrate them at low temperatures to break down the phytic acid and enzyme inhibitors that can affect the absorption of nutrients. They are tender and crispy, a delight to snack on and to use in your desserts and dressings!

How Our Organic Pecans Are Prepared

Once we receive our premium raw pecans, they begin the process with soaking and drying under controlled conditions with commercial equipment in a USDA inspected kitchen. We take extra measures such as refrigeration and vapor barrier packaging to ensure that you receive only the best.

After several cycles of soaking and rinsing and allowing the nuts a little bit of air, germination will occur. This starts to break down the enzyme inhibitors as the nuts release their protective shield and unlock stored nutrients to prepare for growth.

Once the soaking process is complete, we dehydrate the nuts slowly at a very low temperature to extend their shelf life and give them a delicate crunch. This low-heat method will preserve the nutrients and ensure that the pecans remain entirely raw.

In July 2003, the FDA released a qualified health claim stating "Scientific evidence suggests, but does not prove, that eating 1.5 ounces per day of most nuts, as part of a diet low in saturated fat and cholesterol, may reduce the risk of heart disease." As nuts contain a protective shield containing high amounts of phytic acid, Sally Fallon and the Weston A. Price Foundation suggest soaking nuts and dehydrating them at low temperatures to break down their protective shield and lower the phytic acid content. As phytic acid binds to certain minerals in the body and transforms into a phytate, lowering the phytic acid content is important for allowing your body to absorb many of the nut’s most essential nutrients.
