What are the Benefits of Soaking and Dehydrating Nuts?

Sally Fallon and the Weston A. Price Foundation suggests nuts be soaked and dehydrated at low temperatures. Their reasoning? Phytic acid occurs naturally in organic Brazil nuts to protect them until they’re ready for germination. Phytic acid binds to minerals and transforms into a phytate, which inhibits your body’s ability to absorb some of the nut’s nutrients.

After several cycles of soaking and rinsing and allowing the nuts a little bit of air, germination will occur. This starts to break down the enzyme inhibitors as the nuts release their protective shield and unlock stored nutrients to prepare for growth. This process creates "activated” nuts.

The question above: Why should I eat Brazil Nuts? #1 These are scrumptious! #2 They are profoundly nutritious. A number of health care practitioners have recommended 2 Brazil nuts daily. My integrative physician says eat a bunch - in fact, his Natural Pharmacy is where I found them! Do be careful of the calories. I am 76 and have eaten nuts all of my life. Excellent quality and price!

These Brazil nuts have a great texture, and nice clean taste, and almost no rancid ones in the package. Since they are soaked and sprouted and organic, they do not give me any digestive issues like other Brazil nuts have in the past. I will be ordering them again in the near future.
