We activate our raw cashews using a low-temperature soaking and dehydrating technique. The activation process increases the bioavailability of the nut’s nutrients, resulting in organic raw cashews high in magnesium, copper, manganese, vitamin K, phosphorus, zinc, and protein. These activated cashews are what some people might call sprouted cashews.
What are the Benefits of Soaking and Dehydrating Nuts?
Nuts like organic cashews are protected by phytic acid. This compound can bind to nutrients in the nut. The result is a phytate, a substance that affects your body’s ability to absorb the nutrients from the nut.
Our nuts are soaked, rinsed, and allowed a little air. This process is repeated several times. It breaks down the enzyme inhibitors as the raw cashews lose the phytic acid and release stored nutrients. The process is known as “activating” the nuts which may also result in sprouted cashews.
Once the above process is complete, we use a very low temperature to dehydrate the soaked cashews and extend their shelf life while giving them a pleasant crunch. This method uses low temperatures to preserve the nutrients while ensuring the cashews remain raw.
