Grown in Southeast Asia, our cashews are shelled with care, yielding high-grade large, whole nuts. Though the outside hard shell of the nut is exposed to a few seconds of steam before it cracks, the inner nut never experiences heat. Cashews are high in magnesium, copper, and manganese, and a great source of vitamin K, phosphorus, zinc, and protein. The activation process increases the bio-availability of these important nutrients.
We activate our raw cashews using a low-temperature soaking and dehydrating method. Cashews contain many micronutrients, but they also have a delicious, creamy texture and taste. Over the years we’ve invested a lot of time, care, and research into producing the perfect combination of flavor and crunch using our soaking and dehydrating methods.

What are the Benefits of Soaking and Dehydrating Nuts?
It’s recommended by Sally Fallon and the Weston A. Price Foundation that you soak and dehydrate nuts. But why?
Nuts are protected by phytic acid until they are ready to germinate. The phytic acid can bind to nutrients in the nut. The result of this is a phytate, a substance that affects your body’s ability to absorb the nutrients from the nut.
The nuts are soaked, rinsed, and allowed a little air. This process is repeated several times until germination begins. Germination breaks down the enzyme inhibitors as the nuts lose the phytic acid and release stored nutrients used for growth. The process is known as “activating” the nuts.
Once the above process is complete, we use a very low temperature to dehydrate the nuts and extend the shelf life while giving them a pleasant crunch. This method uses low temperatures to preserve the nutrients while ensuring the cashews remain entirely raw.
