Grain-Free Peanut Butter Brownie Bites

Unfortunately, many people are allergic or sensitive to the one ingredient that gives traditional brownies that springy, oh-so-perfect chewy, cakey texture — wheat flour.

Coconut flour is an excellent wheat flour substitute… but there are a few things you need to know.
Coconut flour loves moisture. It cannot be substituted cup-for-cup with wheat or even gluten-free flours; you’ll end up with dense, inedible brownies if you try that! Recipes with coconut flour always use more eggs than their conventional counterparts.
We love coconut flour for another reason — lots of folks are allergic or sensitive to nuts, yet coconut flour is actually a nut-free flour!
This flour is so allergy-friendly and so versatile, it can be used in sweet and savory foods alike. Use it as a breading for fish or chicken nuggets, use it in pancakes and waffles, cookies, cakes, and yes… grain-free brownies and these grain-free peanut butter brownie bites!
Try this one out on your friends, your kids, and especially on all the “health food skeptics”. We’re sure they’ll be a new favorite.

- ½cup Wildly Organic Coconut Floursifted
- ½cup cassava floursifted
- 1teaspoon baking powdersifted
- ¼teaspoon Wildly Organic Himalayan Pink Salt
- 1½cup Wildly Organic Coconut Sugar
- ½cup mini chocolate chipsallergy-friendly preferred
- 6 eggsroom temperature
- 2teaspoons vanilla
- ⅓cup Wildly Organic Raw Cacao Buttermelted
- 1cup coconut cream
- ¼cup Wildly Organic Coconut Spreadsoftened
- ¼cup Wildly Organic Coconut Sugar
- ¼cup Wildly Organic Coconut Milk Powder
- 2tablespoons Wildly Organic Cold Pressed Coconut Oilmelted
- 1cup peanut powder
- ½cup water
- ¼cup mini chocolate chipsallergy-friendly preferred

Preheat oven to 350F.

Mix all dry ingredients into a bowl.

Mix all wet ingredients in a separate bowl.

Add dry ingredients into wet, and mix thoroughly.

Rub the inside of each mini cupcake well with coconut oil, then fill each well ½ way with batter.

Place in the oven for 5 minutes.

Remove from the oven and push in the center of each brownie to form a "cup".

Place back in the oven for another 5 minutes or when toothpick inserted comes out clean.

Remove from the oven and let cool. Brownie bites should be cool before adding the peanut butter filling.

Combine all the ingredients, except for chocolate chips, into a bowl.

With a hand mixer, mix until smooth.

Fill each cooled brownie bite with a teaspoon of filling, then sprinkle with remaining chocolate chips.

Serve and enjoy!
