Hot Chocolate Pudding {Paleo, Vegan}
This fall and winter season, try this Hot Chocolate Pudding that is dairy-free and vegan—it’s so easy to make. Our kids’ favorite! This pudding is a great after-school snack or even a tasty after-dinner dessert. I love pudding and hot chocolate, so it was fun to have them both in the same dessert. Using Wildly Organic hot chocolate mix, it was super easy to make this dairy-free pudding. I also found adding Wildly Organic dried mangoes and fresh pomegranates as toppings made the pudding even more enjoyable.
What you’ll need to make the best Hot Chocolate Dairy-Free Pudding
Wildly Organic Hot Chocolate Mix – This dairy-free, vegan, and organic hot chocolate mix is a healthier tasty alternative to the regular mix. It is made with only three organic ingredients: raw organic fermented cacao powder, dairy-free organic coconut milk powder, and organic coconut sap sugar.
Tapioca pearls or tapioca flour – Tapioca pearls or tapioca flour helps thickens the pudding. If you don’t have tapioca on hand you can make this chocolate pudding recipe using corn starch rather than the tapioca, however, I prefer the tapioca.
Vanilla – A great addition to the pudding that rounds out the chocolate flavor.
Water or Coconut milk – Since this recipe uses hot chocolate mix, it only needs water as the liquid part. However, if you want to have an even more creamer pudding, you can use coconut milk instead.
Wildly Organic Coconut Syrup – Since the hot chocolate mix is not very sweet, you may want to add an additional sweetener. Wildly Organic Coconut Syrup is a natural sweetener, and one of my favorites. It’s delicious and great to use anytime you want to replace sugar, maple syrup, or molasses.
Toppings – You can definitely eat this hot chocolate pudding by itself. However, toppings are a lot of fun to add. I enjoy using Wildly Organic Dried Mangoes and fresh pomegranate seeds. Other great toppings you can add are berries, kiwis, cherries, and oranges.

- 3tablespoon Wildly Organic Hot Chocolate Mix
- 1/4cup tapioca pearls or 3 tablespoons tapioca flour
- 1teaspoon vanilla extract
- 1cup water or coconut milk
- 2tablespoon Wildly Organic Dried Mangooptional as topping
- 1tablespoon Pomegranate seedsoptional as topping

In a saucepan, stir together the hot chocolate mix, tapioca pearls or tapioca flour, vanilla extract, and water.

Cook under low-medium heat, stirring frequently, until the pudding thickens and the tapioca pearls turn translucent.

Add the pudding to individual cups, and let it cool and thicken for at least 30 minutes.

Serve warm or chilled, plain or with your favorite toppings.
