Keto Fresh Cranberry Salad {Dairy-Free, Grain-Free, No Refined Sugar}

Keto Fresh Cranberry Salad Recipe

This delicious cranberry salad starts with fresh cranberries! Cranberries are loaded with vitamin C. This time of year supporting our immune systems is so important. Making sure to get enough vitamin C is essential.

Most cranberry salad recipes are full of sugar. Since cranberries are pretty tart, they need that sweetness! However, on the keto diet — and other carb-conscious lifestyles — sugar is a definite no. Instead, we use a keto-friendly sweetener to lightly sweeten the tart cranberries in this fresh salad.

The star of this delicious keto fresh cranberry salad is Wildly Organic MCT Oil. It gives your salad a metabolism boost! Using healthy oils in our salads also help support good health.

    Instructions
    1. In a food processor, pulse the cranberries until chopped fairly fine. Alternatively, chop with a knife until fairly fine.
    2. Add the chopped cranberries to a mixing bowl and add the sliced celery, shallot, and pecans and stir to mix well.
    3. In a small bowl or glass measure whisk together the oils, vinegar, garlic, sweetener, vanilla, and salt.
    4. Pour vinaigrette over the cranberry mixture an stir well until cranberry mixture is well coated in the vinaigrette.
    5. Top with more pecans if desired before serving.
    6. Enjoy right away or refrigerate until ready to eat. If eating later, be sure to give it a good stir before serving.
