Do You Eat Cranberry Salad On Your Turkey Or Beside It?
- 1 pound fresh cranberries
- 2cups sliced celery
- 1/2cup Wildly Organc Raw, Dehydrated Pecansplus more for garnish, if desired
- 1 medium shallotsliced into thin rings
- 2tablespoons Wildly Organic Olive Oil
- 2tablespoons Wildly Organic MCT Oil
- 2tablespoons Wildly Organic Coconut Vinegar
- 2 to 3tablespoons erythritol/stevia blend sweeteneror preferred sweetener to taste
- 2cloves garlicminced or pressed
- 2teaspoons pure vanilla extract
- 1/4 teaspoon Wildly Organic Pink Himalayan Salt

In a food processor, pulse the cranberries until chopped fairly fine. Alternatively, chop with a knife until fairly fine.

Add the chopped cranberries to a mixing bowl and add the sliced celery, shallot, and pecans and stir to mix well.

In a small bowl or glass measure whisk together the oils, vinegar, garlic, sweetener, vanilla, and salt.

Pour vinaigrette over the cranberry mixture an stir well until cranberry mixture is well coated in the vinaigrette.

Top with more pecans if desired before serving.
