Keto Lemon Pistachio Fat Bombs Recipe
These lemon pistachio fat bombs combine Wildly Organic Almond Flour, Wildly Organic Coconut Oil, lemon zest, fresh lemon juice, a non-glycemic sweetener such as erythritol, and a pinch of mineral rich pink Himalayan salt. All you have to do is combine the ingredients and roll into balls for a quick and easy keto treat. Fun shaped candy molds or muffin liners made of silicone are also a great way to make fat bombs.

- 1 lemonzested and juiced
- 2cups Wildly Organic Almond Flour

Chop or crush pistachios and place into a small bowl.

In a food processor, add almond flour, sweetener, coconut oil, lemon juice, and salt. Pulse until mixture forms a ball.

Alternatively, mix everything together in a bowl with a spoon.

Scoop out about 2 heaping teaspoons of mixture and roll into a ball.

Roll each ball in the pistachios to coat.

Or, mix pistachios right in with the rest of the fat bomb ingredients and skip the rolling step.

If using another sweetener, use an amount equivalent to 1/2 cup of sugar. Taste and adjust as needed.
