Keto Lemon Pistachio Fat Bombs Recipe

These lemon pistachio fat bombs combine Wildly Organic Almond Flour, Wildly Organic Coconut Oil, lemon zest, fresh lemon juice, a non-glycemic sweetener such as erythritol, and a pinch of mineral rich pink Himalayan salt. All you have to do is combine the ingredients and roll into balls for a quick and easy keto treat. Fun shaped candy molds or muffin liners made of silicone are also a great way to make fat bombs.

Nuts are a healthy source of nutrients and Wildly Organic Pistachios are no exception. Since they are soaked, phytic acid is reduced. This makes them more digestible and the nutrients in them better absorbed by the body. And, since they’re also dehydrated at low temperature they’re still a raw food.     Ingredients
    Instructions
    1. Chop or crush pistachios and place into a small bowl.
    2. In a food processor, add almond flour, sweetener, coconut oil, lemon juice, and salt. Pulse until mixture forms a ball.
    3. Alternatively, mix everything together in a bowl with a spoon.
    4. Scoop out about 2 heaping teaspoons of mixture and roll into a ball.
    5. Roll each ball in the pistachios to coat.
    6. Or, mix pistachios right in with the rest of the fat bomb ingredients and skip the rolling step.
    7. Enjoy right away or refrigerate or freeze until later.
    Recipe Notes

    If using another sweetener, use an amount equivalent to 1/2 cup of sugar. Taste and adjust as needed.

    Add extra lemon juice if you like a lot of lemon flavor.
