Originally made for salads, this delicious lemon poppy seed dressing works nicely on cooked dinners also. It’s light and refreshing due to its the lemon base but it also has a lot of health-boosting ingredients like onions and garlic.

This dressing is on the sweeter side thanks to the coconut sap (a sweetener similar to molasses) which also gives it a thicker consistency. This consistency almost caramelizes once cooked making the chicken dinner a bit more indulgent than just regular roasted chicken.

The ingredients in the dressing are unrefined and haven’t been pasteurized. So, opting for this dressing in place of making your own is a great time-saving way to keep your family healthy!

Another aspect that’s overlooked when making healthy family meals is cruciferous veggies. A high source of fiber, folate, and vitamins, it’s not often we eat these veggies. And let’s face it, steamed brussels sprouts aren’t exactly appetizing.

Sheet Pan Lemon Poppy Seed Chicken {
This sheet pan lemon poppy seed chicken dinner comes together quickly (one bowl and one pan) and saves you a big mess and gives you more time to spend with your family.     Ingredients
    Instructions
    1. Preheat the oven to 350 degrees Fahrenheit.
    2. In a large bowl, toss the Brussels sprouts in the olive oil, sea salt, garlic powder, and 2 tablespoons of the lemon poppy seed dressing.
    3. Line a large baking sheet with tinfoil and distribute the brussels sprouts onto the pan. Leave room in the middle of the pan for the chicken.
    4. In a bowl, toss the chicken in the remaining lemon poppy seed dressing and lay each breast flat on the pan.
    5. Bake at 350F for 15 minutes. Remove from the oven, flip the chicken and stir the brussels sprouts. Cook for another 25-30 minutes, or until chicken is cooked through to an internal temperature of 165F.
    6. Remove from the oven and let cool briefly for 5 minutes. Serve.
