Tasty Quinoa Bites {Gluten-Free, Vegan}

Gluten-free living can be challenging when it comes to snacking and breads. Especially if you’re a challenged baker like myself. Say hello to your new favorite gluten-free snack! These delicious quinoa bites that can be used as a sweet bread or snacked on all by itself.

I created this gluten-free quinoa bite recipe for a grab and go breakfast option that I knew was nutrient dense, packed with protein, loaded with healthy fibers, and absolutely delicious of course!

Tasty Quinoa Bite Recipe Ingredients:

Quinoa – This is the base of your healthy snack. Quinoa is a complete protein and packed with all nine essential amino acids. Plus it’s loaded with fiber too.

Wildly Organic Almonds – Packed with healthy fats, protein and nutrients like magnesium, vitamin E, and antioxidants, you can’t go wrong with eating almonds any time of day.

Gluten-Free Rolled Oats – The third source of protein in this delicious gluten-free snack recipe! The oats act as part of a binder to hold everything together.

Wildly Organic Chia Seeds – What’s that? A FOURTH source of protein?! Yep, you heard me right! When I said this recipe was packed with protein, I wasn’t messing around!

Wildly Organic Coconut Syrup – This is my favorite sweetener, which gives these quinoa bites a sweet flavor in addition to holding all of the ingredients together.

Wildly Organic Butter Alternative – Additional healthy fats to keep you full and satiated longer.

Wildly Organic Himalayan Pink Salt – A staple in my home, I use in all of my recipes. You just need a pinch here.

We love topping these quinoa bites or “bread” with Wildly Organic’s Nut Butter Medley for even more protein to keep us fueled all morning.

Store in an air tight container in the fridge, eat cold with your favorite toppings, we like nut butter and berries.

Say hello to your new favorite gluten-free snack! These delicious quinoa bites that can be used as a sweet bread or snacked on all by itself. This quinoa snack makes the perfect grab and go breakfast option that is nutrient dense, packed with protein, loaded with healthy fibers, and absolutely delicious of course!
    Ingredients
    Instructions
    1. Preheat oven to 325° F
    2. Combine all ingredients in a bowl and mix well
    3. Cover a sheet pan with parchment paper
    4. Lay out mixture onto paper and spread thin, but ensure that all of the mixture stays connected and that there are no holes
    5. Bake on middle rack for 15 minutes (Check at around the 10 minute mark to ensure no burning is occurring. You want the edges to be turning a little brown but no where else)
    6. Most important step right here: Move to top rack and crack oven about 5 inches for at least 45 minutes to cool and crisp.
    7. After cool enough to touch, place sheet pan in the fridge for 15 minutes. Then use a pizza cutter to cut into pieces and enjoy. Store in an air tight container in the fridge, eat cold with Wildly Organic Nut Butter Medley on top.
