It should be noted that our organic almonds and cashews are steam pasteurized per the US law for domesticated sourcing.
Though the organic nuts themself receive little or no heat, for these varieties, we use hot air to loosen the shells gently so the meat comes out whole rather than in pieces.
Additionally, our organic raw California almonds are heated slightly after shelled, as mandated by the USDA.
