Paleo Zucchini Fritters {Grain-Free, Whole30, Dairy-Free}

What will you serve with these Paleo Zucchini Fritters?
- 3cups grated zucchiniabout two large zucchini
- 1/4teaspoon Wildly Organic Himalayan Pink Salt
- 1tablespoons Wildly Organic Centrifuge Extracted Coconut Oil
- 2 eggs
- 3/4cup Wildly Organic Almond Flour
- 1/4cup nutritional yeast
- 1Tablespoon Wildly Organic Garlic Powder
- 1teaspoon Wildly Organic Onion Powder
- 1/2teaspoon baking powder
- 1/8teaspoon Wildly Organic Himalayan Pink Salt
- 1/8teaspoon Wildly Organic Black Pepper
- 1Tablespoon arrowroot powder
- 2tablespoons Wildly Organic Centrifuge Extracted Coconut Oil

Grate the zucchini and toss it with the sea salt. Let sit in a strainer for five minutes.

Then, use your hands to squeeze the excess water out of the zucchini.

Melt 1 tablespoon of coconut oil.

In a large bowl, combine the eggs, zucchini and the melted coconut oil.

Add in the almond flour, nutritional yeast, garlic powder, onion powder, baking powder, pink sea salt, ground black pepper, and arrowroot powder and mix until combined. Let sit for two minutes.

Meanwhile, heat a large pan over medium-high heat. Add the remaining two tablespoons of coconut oil and let melt.

Once the pan and oil are hot, portion out the fritters. Use an ice cream scoop to scoop out the batter, press it together with a spatula (so it will hold together) and place in the oil. Then, use a form to press the fritter down until about ¼-1/2 inch thick.

Cook uncovered for 6 minutes until the bottom is golden brown and then flip to the other side. Cook for another 4-6 minutes until cooked through.

Top with your favorite toppings, such as chipotle mayo, sliced avocado, or cashew sour cream.
