Chocolate Cherry Truffles {Gluten-Free, Vegan}

These chocolate cherry truffles are wonderful as dessert or for an afternoon snack. If you love cherries, then you will love this cherry truffle recipe. What can be better than chocolate and cherries at the same time?

They are made with clean ingredients that you will feel good about. These chocolate cherry truffles are great for kids and adults. This cherry truffle recipe is gluten-free, dairy-free, and vegan. They are so easy to make, and they can be made ahead of time to have ready when you’re in a hurry.

Ingredients for Chocolate Cherry Truffles:

Cherries —  You can use either frozen or fresh. I used fresh since they are in season now. We used organic cherries because the conventional cherries may be high in pesticides, and we like to stay away from those as much as we can.

Wildly Organic Coconut Oil — This coconut oil is one of the highest-quality unrefined, organic coconut oils. It gives a healthy dose of saturated fats and fatty acids to these truffles.

Wildly Organic Coconut Syrup — I love this syrup because it tastes delicious and because it’s so healthy. It has a great caramel taste, and it is a great substitute for maple syrup or agave syrup. The cherry truffles taste so good with coconut syrup. I tend to use it more often than other sweeteners because of the quality and taste.

Dairy-Free Chocolate Chips — For the chocolate part of the cherry truffles, I melted some dairy free chocolate chips. The chocolate you pick matters; you want to be sure you love the chocolate you pick because it will give the overall taste to your truffles. You can also melt your favorite chocolate bar too.

How to make the best truffles

To make the outside chocolate part of the truffle, pick a chocolate bar or chocolate chips with a flavor that you know you love. The quality of the ingredients matters for these chocolate cherry truffles.

Keep them in the fridge or freezer until serving.

Freeze the cherry and coconut mixture first before rolling them in the melted chocolate.

Use one or two spoons to help you roll the cherry coconut balls in the melted chocolate.

These Chocolate Cherry Truffles are a great gluten-free, dairy-free, and vegan dessert or power snack. They are delicious and perfect for kids and adults. No baking needed, and they can be made ahead of time.

    Instructions
    1. In a high speed blender add cherries, 1 cup of coconut oil, and coconut syrup. Blend until all is smooth.
    2. Pour the cherry filling into a bowl, and put in the freezer for about 5 -10 minutes, until the mixture hardens.
    3. Take the bowl out of the freezer. Using a cookie scoop, make small balls of the cherry filling, and add them to a cookie sheet lined with parchment paper.
    4. Place them back in the freezer for few minutes until they are firm and not coming apart. Meanwhile, add the chocolate chips and 2 tablespoons of coconut oil to a glass bowl. Melt in the microwave for a couple of minutes or over the stove.
    5. For the stove method, set the bowl in a saucepan filled halfway with water. The bowl does not need to touch the bottom of the pan, and the water doesn’t need to get in the bowl with the chocolate chips.
    6. Over low to medium heat, heat the water in the saucepan. With a silicone or wooden spatula, stir the chocolate chips until they become soft and melted.
    7. Take the cherry filling balls out of the freezer. Roll each one through the melted chocolate and add them back on the cookie sheet.
    8. Put the truffles back in the freezer, until the chocolate is firm and hard, about 3 to 5 minutes.
    9. Keep in the fridge or freezer until serving.
