These Coconut Sugar Cookies are soft, chewy, and delicious. This healthy sugar cookie recipe is Paleo-friendly, gluten-free, and dairy-free. They are perfect little guilt-free snack to have with your morning coffee or tea.

    1. Line a baking sheet with parchment paper and turn oven to 350 F.
    2. In a bowl using a hand mixer, beat the sugar and butter alternative together.
    3. Add the egg, agave syrup and vanilla, then mix it together.
    4. Add the salt, baking soda, almond and coconut flour.
    5. Using the hand mixer or a spatula, mix well until all the flour is incorporated.
    6. Scoop some dough with a cookie scoop or spoon onto the baking sheet. Using your fingers, gently press the dough into a cookie shape.
    7. Bake the cookies for 8 to 10 mins until the sides look done. The middle of the cookie might still be soft, however once the cookies cool, it will harden a bit and become a chewy cookie.
