These gluten-free hot cocoa cookies use Wildly Organic Hot Chocolate Mix to bring you all the flavors and comfort of hot chocolate. Traditional hot chocolate mix is loaded with excess sugar and modified oils. However, Wildly Organic hot chocolate mix contains only three ingredients: coconut sap sugar, coconut milk, and cacao powder. Everything you need to make a creamy cup of hot chocolate without all the artificial ingredients and refined sugars!
Cacao powder has been said to be loaded with calcium, antioxidants, and iron. Using the hot chocolate mix as the base for these cookies means that there are no hidden ingredients. No additives. Just pure hot chocolate flavor.
The cookies also use Wildly Organic Almond Flour as the base of the cookie. Almond flour helps slow the release of the sugars in the cookies and gives them a more satiating feeling.
Using coconut sugars in the cookie recipe means that you don’t need as much as you normally would with traditional cookies. - 1cup Wildly Organic Hot Chocolate Mix
- 2cups Wildly Organic Almond Flour
- 1 1/3cups oat flourgluten-free certified if needed
- 1/4cup Wildly Organic Coconut Sap Sugar
- 2teaspoons baking powder
- 1/2cup Wildly Organic Centrifuge Extracted Coconut Oilmeasured solid
- 2 eggs
- 1/4cup Wildly Organic Coconut Syrup
- 1/4cup unsweetened almond milk
- 2/3cups mini chocolate chipsdairy-free if needed

Preheat the oven to 350F. Line two baking sheets with parchment paper and set aside.

In a large bowl mix the hot chocolate mix, almond flour, oat flour, coconut sugar, and baking powder.

Melt the coconut oil and pour it into the dry ingredients.

Then, mix in the egg, coconut syrup and almond milk.

Finally, stir in the chocolate chips.

Portion out the cookie dough onto the prepared baking sheets using a spoon. The cookies do expand so leave a few inches in between.

Bake for 14 minutes. Remove from the oven and leave on the sheet pan to cool before serving.
