What veggies would you add to this Colorful Wild Rice Stir Fry recipe?
- 1cup Wildly Organic Wild Ricedry
- 2heads broccolichopped
- 2 bell pepperssliced
- 1tablespoon Wildly Organic Centrifuge Extracted Coconut Oil
- 1/2cup Wildly Organic Pecans
- 1/4cup hemp hearts
- 3tablespoons avocado oil
- 1tablespoon pure maple syrup
- 3tablespoons balsamic vinegar

Cook rice according to package directions. Set aside.

Pre-heat oven to 350F.

Heat the oil in a large pan over medium to high heat.

Toss in the veggies and cover. Cook for 10-12 minutes until almost tender. Stir/toss every couple of minutes.

Meanwhile, whisk together the avocado oil, maple syrup, and balsamic vinegar to make the sauce.

Chop the pecans and place them on a line baking tray. Bake in the oven for 6-9 minutes until slightly toasted. Pay attention to them as the burn easily! You only want them lightly browned.

Remove the lid from the veggies and toss in half the dressing. Cook uncovered for another 3-5 minutes.

To serve, divide the rice onto plates, top with the veggies, pecans, and hemp hearts. Drizzle remaining dressing over top.
