  • Use turnips or rutabagas instead of potatoes.
  • If you like heat, toss in a chopped jalapeno or 2 or some red pepper flakes.
  • Want a thicker soup? Puree half of the soup and pour it back into the pot to reheat. The starch from the potatoes will help thicken it up.
  • Or toss in some wild rice for a thicker and even more filling meal.
  • Garnish the soup with fresh parsley or cilantro for a bright flavor and color.

    Ingredients
    Instructions
    1. Melt coconut oil in Dutch oven.
    2. Add the onions, garlic, and cabbage to the coconut oil. Season with a pinch of salt and pepper. Stir and saute until the cabbage the is wilted.
    3. Add the carrots, celery, and potatoes. Toss to coat. Add the broth. It will just barely cover the vegetables.
    4. Reduce heat to medium, cover the pot. Simmer until vegetables are tender about 20 minutes.
    5. In a small bowl, whisk together the cocounut milk powder and hot water until dissolved.
    6. Pour the coconut milk into the soup, stir well. Heat through gently.
    7. Thicken, add toppings and garnishes, own your soup!
    8. Serve hot.
