Hearty and creamy, dairy-free cream of cabbage soup is a filling meal that stretches the food budget. The combination of cabbage and potatoes is a comforting and nutritious one that seems to date back centuries.

Increase the nutrition with homemade bone broth (or vegetable broth for vegetarians).

Using powdered coconut milk gives a rich and creamy flavor at a fraction of the cost of canned full-fat coconut milk. Coconut milk is full of vitamins and minerals further increasing the health benefits of this filling soup. It’s perfect if you’re avoiding dairy!

Own Your Soup!

Use this recipe as a guideline, not a strict rule. A few more carrots won’t ruin anything. Don’t have celery on hand? Skip it. Use whatever veggies you have. Here are a few suggestions so you can “own” your soup:

  • Use turnips or rutabagas instead of potatoes.
  • If you like heat, toss in a chopped jalapeno or 2 or some red pepper flakes.
  • Want a thicker soup? Puree half of the soup and pour it back into the pot to reheat. The starch from the potatoes will help thicken it up.
  • Or toss in some wild rice for a thicker and even more filling meal.
  • Garnish the soup with fresh parsley or cilantro for a bright flavor and color.
  • A sprinkling of cheese for folks not worried about dairy is nice, too.
  • Add crunch with a few croutons.
  • Sunflower seeds or pumpkin seeds add texture and nutrition to this already nutritious soup.

This hearty, yet frugal, dairy-free cream of cabbage soup is an easy recipe for creamy comfort food that nourishes the body without breaking the bank!

    Ingredients
    Instructions
    1. Melt coconut oil in Dutch oven.
    2. Add the onions, garlic, and cabbage to the coconut oil. Season with a pinch of salt and pepper. Stir and saute until the cabbage the is wilted.
    3. Add the carrots, celery, and potatoes. Toss to coat. Add the broth. It will just barely cover the vegetables.
    4. Reduce heat to medium, cover the pot. Simmer until vegetables are tender about 20 minutes.
    5. In a small bowl, whisk together the cocounut milk powder and hot water until dissolved.
    6. Pour the coconut milk into the soup, stir well. Heat through gently.
    7. Thicken, add toppings and garnishes, own your soup!
    8. Serve hot.
