Almond Butter Coconut Chocolate Cookies {GF, paleo, DF}

These easy almond butter coconut chocolate cookies are so delicious, they’ll become your new favorite chocolate chip cookie recipe. Plus, they only require 8 ingredients making them so simple, your kids will love helping you make them.

Easy Almond Butter Coconut Chocolate Cookies

There is NO flour in this entire recipe! That’s right. It’s flourless. The base of the cookie is made from Wildly Organic almond butter. You can use other nut butter in its place as well. Wildly Organic walnut butter would be fabulous during the fall! At its basic core, you can easily make these cookies with just 4 ingredients: almond butter, egg, baking powder, and coconut sugar. However, we think it’s better when you add some extra flavor like vanilla, pink Himalayan salt, dark chocolate chunks, and Wildly Organic coconut flakes.

These cookies are so soft and chewy, you would never know they’re completely gluten-free and made without refined sugar! These cookies would also taste great with some chopped walnuts or sliced almonds mixed into the batter.

There are a few key tips you should follow in order to make these cookies come out delicious every time. When you combine all of the ingredients you may think the dough looks too wet. However, just let it sit in the refrigerator about 20-30 minutes and scoop onto a baking sheet lined with parchment paper. Then, just bake and let set. You must let the cookies set. They’re rather flimsy coming out of the oven but once they cool and set up they are absolute perfection!

These easy almond butter coconut chocolate cookies are flourless, but FULL of flavor! They're so simple to make, they only require one bowl! They're gluten-free, dairy-free, paleo friendly and contain no refined sugar. What more could you want in a cookie?

    Ingredients
    Instructions
    1. In a large bowl, add almond butter, coconut sugar, egg, vanilla extract and baking powder. Stir to combine.
    2. Stir in dark chocolate chips, coconut flakes and pink himalayan salt until evenly disbursed.
    3. Refrigerate for at least 30 minutes.
    4. Preheat oven to 350F. Line a baking sheet with parchment paper. Spoon cookie dough by the tablespoon onto the baking sheet. Lightly press down to slightly flatten the dough.
    5. Bake at 350F for 10-12 minutes. Let sit on the pan for at least 5 minutes to let it set. Remove and allow to finish cooling on a cooling rack.
