These high-energy Mango Granola Bars are delicious, healthy, and nutritious. Made with only organic natural ingredients, these no-bake Mango Granola Bars are great for a post-workout reward or an after-school snack that will give you or your kids energy without experiencing a sugar crash.

    Instructions
    1. Line an 8” x 8” dish with parchment paper.
    2. Cut the dried mangoes into small pieces, and add them to a bowl.
    3. Using a knife or food processor, roughly chop the almonds. Add them to the bowl with the mangoes.
    4. Add the pumpkin seeds, coconut flakes, and chia seeds to the bowl.
    5. In a small sauce pan, add the almond butter and coconut syrup. Warm the mixture over low heat for about 5 minutes, until melted and runny.
    6. Stir the heated almond butter and coconut syrup, and then pour over the nuts and seeds in the bowl.
    7. Mix thoroughly until all of the nuts, seeds, and mangoes are covered with the almond butter and coconut syrup mixture. You might need to use your hands.
    8. Transfer the mixture to the lined 8” x 8” dish, and press down firmly until it is all packed. Using a wet spatula and wet hands will help the granola mixture to not stick to your hands.
    9. Add to fridge for about 1 hour or until the granola mixture has cooled. Cut 8 to 10 granola bars. You can store them at room temperature or in the fridge or freezer.
