These Superfood Popcorn Snack Bars take plain ol’ popcorn kernels to another level. They are a cross between crispy puffed rice cereal treats and granola bars — but with the healthy twist of added superfoods.
Sweetened with mineral-rich Wildly Organic agave nectar and Wildly Organic Coconut Sugar, these bars are a wonderful way to satisfy a sweet tooth. The addition of goji berries for antioxidants and cacao nibs for crunch make these Healthy Popcorn Bars a party for your taste buds! With these add-ins, these bars are more nutrient-dense. What would you add to these popcorn bars?
- 5tablespoons Wildly Organic Agave Nectar(or honey - not vegan-friendly)
- 1/2cup Wildly Organic Coconut Sugar
- 4cups Wildly Organic Popcornpopped, unsalted
- 3/4cup Wildly Organic Soaked & Dried Pumpkin Seeds
- 3/4cup Wildly Organic Soaked & Dried Almondschopped
- 1/4cup Wildly Organic Goji Berries
- 1/4cup Wildly Organic Fermented Cacao Nibs

Line 9X9 casserole dish with parchment paper and leave sides of paper for easy release.

In a small saucepan, heat agave nectar and coconut sugar until combined well and sugar is completely dissolved.

In a medium bowl, combine all dry ingredients.

Pour sweetener syrup over popcorn mixture. Toss to coat well.

Transfer to prepared dish and spread evenly, pressing firmly into sides and corners. (Slightly dampen your fingers to make it easier).

Refrigerate for 1 hour. Remove from pan by pulling by sides of parchment paper.

Cut into squares and store in airtight container in the refrigerator to be enjoyed!
