High Protein Granola {Gluten-Free, Vegan}

Granola is such a versatile food, use it to top smoothie bowls, pies, pancakes, waffles, yogurt bowls and more! It’s a staple in our home, I bet your family doesn’t mind having a big jar laying around either. That’s why it’s so important to me as a Nutritionist to make sure our granola is full of only the healthiest ingredients. So I created this High Protein Granola! Because grabbing for a snack should fuel your body, not put you into an afternoon slump.

All you’ll need is a few of my favorite Wildly Organic products and some pantry staples: 

Wildly Organic Mixed Nuts: We love them for that added extra crunch. Plus they are a wonderful source of protein, antioxidants, and healthy fats to keep you fueled. 

Wildly Organic Pumpkin Seeds: Your secret high protein ingredient, just ¼ cup of pepitas (pumpkin seeds) has 11g of protein. 

Wildly Organic Coconut Syrup: This will give a subtle sweetness to your crunchy granola. I love it because it contains inulin. Inulin is a soluble fiber found in plants that may help slow blood sugar from spiking. 

Wildly Organic Coconut Oil: An additional fat that will help crisp all of the oats up while cooking, plus aids in keeping you fuller longer YAY!

Optional Organic Ceylon Cinnamon and Vanilla Extract: For added deliciousness. 

The healthy ingredients aren’t the only thing to love about this high protein granola, it’s easy and quick to make too. 

Add this high protein granola on top of your favorite dairy free yogurt, add some fruit for an antioxidant boost, I love blueberries. Optional: Top with Wildly Organic Chocolate Syrup. 

This stuff makes a great snack anywhere any time. Tote it along your next hike, picnic, or use it to help you power through your work day. You’re going to love it!

High Protein Granola {Gluten-Free, Vegan}
You'll love this High Protein Granola, packed with nutrient rich foods, healthy fats, and so much protein to keep you going. Use it to top your smoothie bowls, pies, pancakes, waffles, yogurt bowls and more! Naturally plant-based and gluten-free!

    Ingredients
    Instructions
    1. Preheat the oven to 350. In a large bowl mix together all of the oats, Wildly Organic Coconut Syrup, melted Wildly Organic Coconut Oil, cinnamon, and vanilla extract.
    2. Line a baking sheet with parchment paper and lay the mixture in one even layer and put in the oven.
    3. Bake for 10 minutes.
    4. After 10 minutes stir and add in the Wildly Organic Mixed Nuts and Wildly Organic Pumpkin Seeds
    5. Optional: Top with ½ tablespoon of Wildly Organic Coconut Syrup to sweeten nuts and make them sticky
    6. Bake for 10 minutes.
    7. Most important step: Open the oven door about 10 inches and TURN OFF THE OVEN. Let granola rest in the oven for at least 1 hour or overnight. This is how it crisps up without burning.
    8. Store in an airtight container and enjoy!
