Will you make these No-Bake Carrot Cake Energy Bites for a snack?
- 1 very ripe banana
- 1/2cup shredded carrot
- 1cup oatsgluten-free certified
- 1teaspoon ground cinnamon
- 1/2teaspoon ground nutmeg
- 1/8cup Wildly Organic Almond Flour
- 4teaspoon arrowroot powder
- 1/4teaspoon almond extract
- 1/4cup Wildly Organic Walnuts
- 2tablespoons molasses
- 3tablespoons Wildly Organic Almond Butter
- 2tablespoons Wildly Organic Coconut Sugar
- 1tablespoon Wildly Organic Coconut Oil

In a large bowl, mash the banana with a fork until few lumps remain.

Add in the remaining ingredients, except for the coconut oil, and mix well until everything is combined. Let sit for five minutes.

Line a cutting board with parchment paper and rub the Wildly Organic coconut oil on your hands (to prevent the ingredients sticking!).

Use your hands to portion and roll the mixture into balls. Place the balls on the parchment paper. You can also use a trigger ice cream scoop instead!

Once the bites are rolled, place them into the refrigerator for 1 hour until mostly firm.

These carrot cake bites can be stored in the fridge or the freezer but are best eaten (and maintain the best consistency) when chilled from the fridge.
