No-Bake Carrot Cake Energy Bites Recipe

These carrot cake energy bites are perfect to combat that mid-day funk. They’re made with tasty, real food ingredients and they require zero baking. Talk about a win!

Using Wildly Organic Almond Butter and Wildly Organic Walnuts make it so these mini bites are loaded with healthy fats. Not only does this give you a nutrient boost but it also makes the balls taste decadent and keeps you full much longer.

Once you feel yourself crashing, most people reach for a sugar-loaded treat. And while that’s tasty, it also leaves you crashing moments later.. again. These carrot cake energy balls taste like dessert but they’re loaded with enough nutrients to give you energy AND to make it last.

The energy bites are made by combining all the ingredients, rolling and tossing into the fridge to firm up. They’re a simple, delicious treat that is great to have on hand. While they do firm up in the fridge when chilled, they do begin to get sticky if left out at room temperature. All the more reason to eat them right away!

Make a big batch of these energy bites, store them in the freezer and then toss a few in the fridge each week as a grab and go snack. You won’t regret it.

And the best part? These energy bites aren’t just great for adults, but kids too! They’re loaded with brain-boosting ingredients. They’re easy to make and perfect to just pop into your mouth when you need one. Vegan, gluten free and the perfect snack when you need a pick me up!

    1. In a large bowl, mash the banana with a fork until few lumps remain.
    2. Add in the remaining ingredients, except for the coconut oil, and mix well until everything is combined. Let sit for five minutes.
    3. Line a cutting board with parchment paper and rub the Wildly Organic coconut oil on your hands (to prevent the ingredients sticking!).
    4. Use your hands to portion and roll the mixture into balls. Place the balls on the parchment paper. You can also use a trigger ice cream scoop instead!
    5. Once the bites are rolled, place them into the refridgerator for 1 hour until mostly firm.
    6. These carrot cake bites can be stored in the fridge or the freezer but are best eaten (and maintain the best consistency) when chilled from the fridge.
