These No-Bake Carrot Cake Energy Bites are a simple, delicious recipe that are great to have on hand for when you're looking for a quick snack. These energy bites aren’t just great for adults, but kids too! Gluten-free, dairy-free and vegan, the whole family will love these carrot cake bites. Make a big batch of these energy bites, store them in the freezer and then toss a few in the fridge each week as a grab and go snack. You won’t regret it.

    Ingredients
    Instructions
    1. In a large bowl, mash the banana with a fork until few lumps remain.
    2. Add in the remaining ingredients, except for the coconut oil, and mix well until everything is combined. Let sit for five minutes.
    3. Line a cutting board with parchment paper and rub the Wildly Organic coconut oil on your hands (to prevent the ingredients sticking!).
    4. Use your hands to portion and roll the mixture into balls. Place the balls on the parchment paper. You can also use a trigger ice cream scoop instead!
    5. Once the bites are rolled, place them into the refridgerator for 1 hour until mostly firm.
    6. These carrot cake bites can be stored in the fridge or the freezer but are best eaten (and maintain the best consistency) when chilled from the fridge.
