No-Bake Paleo Chocolate Almond Bars {Gluten-Free, Dairy-Free}

A simple dessert recipe with only seven ingredients. These paleo chocolate almond no-bake bars come together in under fifteen minutes and are tossed in the freezer to set. No baking, no fuss, no stress.

And these paleo, no-bake bars are a great recipe to keep on hand. They’re simple, tasty, and a hit with kiddos.

One of the reasons I love these paleo chocolate almond bars is because of their high-fat content. Healthy fats of course!

Almonds are lower in carbs but higher in protein and fiber. They’re also higher in antioxidants which are known disease fighters.

Using almonds as the base in these bars not only helps keep them light but makes the bars a bit more nutrient-dense than a traditional dessert.

I love using these bars as a healthy dessert option for my kiddos at parties. While fats may have more calories per gram than it’s counter macros (protein and carbohydrates), kids need healthy fats in their diets.

Fats help boost brain development, ease inflammation, and of course, keep us full! My girls can be bottomless pits when it comes to snacks so giving them something with nuts or healthy fats as a base helps keep their tummies fueled a bit longer.

Plus, these paleo no-bake bars contain minimal sugars. Making your own chocolate means that there are not many hidden ingredients in the topping and it’s also dairy-free.

Cacao powder is another hidden gem in this recipe as it contains calcium, iron, and antioxidants. If you or your kiddos are dairy-free, cacao powder is a wonderful way to supplement some calcium into the diet- and of course, it makes everything chocolate- so win!

Whip up a batch of these no-bake chocolate almond bars and keep them on hand for movie nights, chocolate cravings, or an impromptu party.

They’re simple to make but decadent. I have yet to meet anyone who doesn’t want to gobble them up!

    For The Base
    Instructions
    1. In a large bowl, combine the almond flour, almond butter, coconut oil, vanilla, and honey. Mix until everything looks slightly combined (it won’t be as sticky as you think!).
    2. Line an 8x4 baking tin with parchment paper and press the mixture into the tin. Smooth it out so it’s even, and toss it into the freezer to set.
    3. While the base is freezing, prepare the chocolate. Add the coconut oil, cacao butter, and chocolate sauce to a small pan and heat on low. As the oil and butter melt, whisk together. Once everything is just about melted, turn the burner off and whisk in the cacao powder. Whisk until smooth.
    4. Remove the base from the freezer and quickly pour the chocolate topping over top. Making sure it’s even. Since it’s touching a frozen base the chocolate will harden fast so move quickly.
    5. Get the tin into the freezer and let it set for fifteen minutes (or longer).
    6. Remove from the freezer, cut into squares and enjoy!
    Notes: Allow 5-10 minutes at room temperature and eat immediately as the chocolate topping will melt slightly.
