No-Bake Superfood Granola Bars {GF, Dairy-Free, Vegan, Real Food}
With Fall comes lots of fun activities, delicious apple treats, and of course: insanity! Fall always seems to be a time where I’m running around with kids’ activities, getting busier at work, and just feeling extra busy before the holidays begin.
For me to stay sane, I need to make everything as easy as possible. Which means it’s the perfect time to stock up the freezer with batches of these healthy no-bake superfood granola bars!
No-Bake Superfood Granola Bars Recipe
Not only are these bars easy to make but they also contain a host of superfoods to help boost your energy and keep you fueled while running out the door.
With the primary ingredient as Wildly Organic Goji berries, these no-bake superfood granola bars are full of antioxidants and fuel. These berries are extremely nutrient-dense and known for their anti-cancer properties.
In this easy-to-make bar, they’re combined with chia seeds, coconut oil, and walnuts to really give you the best nutrient bang for your buck.
By combining the berries with lots of healthy fats, these superfood bars will give you lots of energy without the crash!
The combination of chia seeds and walnuts also provides the bars with a good dose of plant-based protein. This makes the bars a bit more filling than opting for a sugar-based, pre-packaged snack.
And since they’re real food-based, these bars are naturally allergy-friendly. They’re both dairy-free as well as gluten-free and they taste delicious!

Will you keep these healthy no-bake superfood granola bars in your freezer for a busy day?
- 1/4cup Wildly Organic Pumpkin Seedsroughly chopped
- 1/8cup Wildly Organic Sunflower Seedsroughly chopped
- 1teaspoon acai powder
- 1/4cup Wildly Organic Chia Seeds
- 1/4cup freeze-dried elderberries
- 1/2cup Wildly Organic Pecansroughly chopped
- 1/2cup Wildly Organic Goji Berriesroughly chopped
- 2tablespoons Wildly Organic Coconut Sugar
- 1/2cup gluten-free certified oats
- 2tablespoons Wildly Organic Centrifuge Extracted Coconut Oil
- 2tablespoons brown rice syrup
- 3tablespoons pure maple syrup

Add the pumpkin seeds, sunflower seeds, acai powder, chia seeds, freeze-dried elderberries, pecans, goji berries, coconut sugar, and gluten-free oats to a large bowl. Stir to combine.

In a small bowl, combine the coconut oil, brown rice syrup and pure maple syrup. Heat slightly in the microwave until coconut oil is melted then, whisk together.

Pour wet into dry and mix to combine until the mixture is well combined and very sticky.

Line an 8x4 pan (you can use a loaf pan!) with parchment paper and place the bar mixture into it. Use another piece of parchment paper on top to press down until even in the pan.

Freeze for one hour. Remove from the freezer and cut into bars or squares.

Store in the freezer. To eat, let thaw 5-15 minutes at room temperature and enjoy!
